Our partnership with Elephants Delicatessen is one of our strongest! Twice a month, members of the Elephants team deliver Food Boxes, stock Emergency Food Closets, and ensure that no one goes hungry. As a B Corporation, Elephants is committed to a high standard of sustainability and community support. It is part of their mission to alleviate food insecurity in the Portland area. In addition to volunteering with Lift UP, Elephants is also a gleaning partner. “At Elephants, community impact is important to us. In 2020, Elephants won the Restaurant Neighbor Award from the National Restaurant Association Educational Foundation. In the true spirit of community building, Elephants used their $10,000 award funding to join Lift UP in the Adopt a Building program last spring, officially becoming the community sponsor to The Jeffrey Apartments. “Restaurants have the unique ability to help the communities we are part of. Tunisian Carrot Salad Local Chef and Lift UP volunteer Jenn Louis has a lovely recipe that's perfect for summer weather! Simple and fresh, this salad will compliment any meal! Serves six people. 2 pounds carrots, peeled and cut into thin rings Bring a pot of water to a boil and add carrots and 1 teaspoon salt. Simmer until almost tender, about 2-3 minutes. Meanwhile, set aside a bowl of ice water. Transfer cooked carrots to the ice bath and chill. Transfer carrots to a bowl and add olive oil. Sprinkle with cumin, caraway, and coriander. Mix gently. Season with lemon juice and salt to taste. Stir in herbs just before serving. Serve at room temperature. Gratefully, The Lift UP Team Food brings us together. |
