We hope everyone is doing ok in their bubbles after an unexpected 2 weeks at home. We are happy to let you know that at Level 3 we can offer contact-less pickup from the shop. Like last year in Level 3 we have set up a perspex screen covering the front door so you can pick up your pre-ordered products during our usual working hours. This is currently 9am to 5.00pm during the week and 9-3pm on Saturday. Any changes to this will be posted on our Facebook page. Markings have been put on the footpath 2 metres apart in case more than one person comes to collect at the same time. Pre ordering what you need on our website will save queues forming outside and allows the payment to be processed via credit card. You can also call us on 576 9442 to place your order if you prefer online payment, though this may take overnight to clear. If the phone line is busy you can email us on admin@bethlehemhealth.co.nz and we will respond as soon as we are able. We will have our eftpos machine available at the door which has paywave for transactions under $200 but won't be able to accept cash.

For those not able to get out to collect we can still courier your order out to you. Charges apply for this and we have been advised there may be delays.

Ingredients:

1 x broccoli, chopped into bite-sized pieces
1 red capsicum, chopped into bite-sized pieces
2 x courgettes, chopped into bite-sized pieces
2 handfuls of green beans
2 x chicken breasts, sliced

Sauce:

1/2 cup peanut butter (or use any nut butter e.g. almond butter)
2 Tbsp tamari sauce (or soy sauce)
1 tsp grated ginger
2 x garlic cloves, crushed
1 tsp honey
Juice of 1 lime
Juice of 1 orange
Pinch of chilli - to taste

Directions:

Make the sauce by mixing all the ingredients together in a bowl or jar, set aside.
Heat a tsp of coconut oil in a large pan and cook the chicken, set aside.
Add extra oil to the pan and cook the vegetables.
Add back to the pan the cooked chicken together with the sauce and stir until hot.
Serve with brown rice. Serves 2-3
