June

June means (home) school is out and summer is officially here. Things have felt pretty heavy the past few months for us all with quarantine fatigue, an overabundance of alarming media and the recent events in the world. It's important to remember to give yourself a break, and find ways to bring some light into your life. 

Consider this newsletter your guide to a fun summer staycation. We have toy rentals, VRBOs, and ways you can serve your neighbors (while still staying 6 feet apart). Things are tough, but you can seize every opportunity to look on the bright side to ease the stress of these difficult times.

Inexpensive VRBO Getaways

A change of scenery, even if it is fairly close to home, can be a game changer when it comes to your mental health. Here are some inexpensive and beautiful VRBO rentals, all located within a few hours of SLC that would be great to share with your family for a quick getaway to recharge.

Showing Love From a Distance

During this time of uncertainty and social distancing, showing kindness to neighbors can lift the spirits of those around you. Here are a few ideas of ways you can show love and support from a distance. 

1. Send a surprise letter or gift: Whether you leave it on the porch or mail it to your neighbor, a surprise is sure to brighten anyone's day. It doesn't need to be elaborate, just a small reminder to make sure they know you care about and support them. 

2. Check on your at-risk neighbors: Since it is recommended that certain populations, like those 65+ and immunocompromised individuals, not go to public spaces, see if you can pick up groceries for them or run other errands. Something as simple as picking up a gallon of milk could make the world of difference, and relieve a lot of stress from those worried about their health. 

3. Host a drive-by parade or walk: It can be a lonely time, so getting outside and visiting from a distance is a great way to keep social connections. Arrange for a neighborhood parade where people can choose to walk or drive, or sit on their porch and watch. 

4. Arrange a neighborhood charity drive/ donation: Local food banks are always looking for donations, especially now. Set food donation boxes on your porch and ask for donations from your neighbors. 

5. Donate your time: If you are healthy and able, volunteer to watch your neighbor's children, walk their dog, clean their yard, or just do something to show you are committed to their well-being and happiness. It doesn't need to be elaborate, because every small gesture counts.

Jamie Oliver's 5-ingredient Creamy Mustard Chicken

INGREDIENTS

  • 7 ounces mixed mushrooms
  • 1 red onion
  • 2 (4-ounce) boneless, skinless chicken breasts 
  • 2 teaspoons whole-grain mustard
  • 1/4 cup heavy cream

INSTRUCTIONS

  1. Place a 12-inch non-stick frying pan on a medium-high heat. Place all the mushrooms in the dry pan, tearing up any larger ones. Let them toast and get dark golden and nutty, tossing occasionally, while you peel and finely slice the red onion and slice the chicken breasts into 1/2-inch-thick strips.

  2. When the mushrooms look good, add the onion and chicken to the pan with 1 tablespoon of olive oil. Cook for 5 minutes, tossing often, then add the mustard, cream, and 2/3 cup of water. Bring to a boil, then simmer until you’ve just got a loose saucy consistency and the chicken is cooked through. Taste, season to perfection with sea salt and black pepper, and dish up.
