Snaffle the Truffle

If you’re anything like us, then you’ll be salivating at the thought of white truffles right now. Daphne’s menu is full of seasonal Italian dishes, which thankfully means that the inimitable white truffle will be making its way over from the heart of the Italian countryside on Wednesday this week. Our chef, Mike Brown has devised a menu of simple dishes, perfect for showcasing the truffle at its best. Classic staples include beef carpaccio, homemade tagliatelle and beef fillet with baby spinach and polenta, all with white truffle from Le Marche. Daphne’s is also supporting the Italian Red Cross in aid of those people affected by the earthquake in Amatrice, near Le Marche region from where we exclusively source our white truffles.

British Supplier Series

On Monday, 19 September, to coincide with the first day of British Food Fortnight, Rivington Grill launched a year-long campaign, celebrating ingredients gathered from our land and shores. Each month, we will champion one of our suppliers, release a series of newly-commissioned photographs by Jason Joyce and share hard-to-resist recipes. Rivington’s chef, Simon Wadham works with produce principally sourced from the British Isles, creating distinctively British dishes for his seasonal A La Carte menus. Following the success of the West Mersea Native Oyster in September, October will be featuring wild boar, supplied by Peter Gott from Sillfield Farm in The Lake District.

Celebrating Truffle Season

The truffles we buy for our restaurants come from Le Marche region in central eastern Italy. As we enter the much anticipated white truffle season, our chefs throughout the group are rising to the occasion with their truffle-scented dishes, be that carpaccio, risotto, pasta, autumn salads or even, in this case, Montgomery Cheddar soufflé. We add a little shaved truffle to the top – its delicate flavour infuses the rich cheese soufflé, and the resulting combination is a match made in heaven!
