New RecipeHere is a recipe from Healthy in a Hurry. It's so quick and easy to prepare. Baked Chicken with Cherry Tomatoes, Herbs & Lemon
1. Preheat oven to 400 degrees. Lightly grease baking dish with 2 tsps. olive oil. 2. Place chicken in prepared dish. Arrange tomatoes around chicken. Drizzle chicken and tomatoes with vinegar and 2 1/2 tsps. olive oil. Sprinkle with salt and pepper. 3. Top each chicken breast half with 2 lemon slices. Arrange tarragon springs and sage leaves over and around chicken. Drizzle remaining 2 tsp. olive oil over herbs. 4. Bake until chicken is opaque throughout. 20-28 minutes. Arrange chicken breasts on each of 4 plates, spooning equal amounts of tomatoes and herbs around each. Best served over rice or orzo. Enjoy!
