Was it due to fewer people? It wasn’t. Fewer entrees? They hadn’t changed either. It was the result of new cooking techniques I had learned and practiced, fueled by the need to cook at home more during a pandemic. It all started with the vegetables. Our High Health Network ran a series of short, live-streamed “Cooking with Cordell” demonstrations of Kenji Lopez-Alt’s five basic techniques for cooking vegetables. Immediately I recognized—for the first time—that the secret to fabulous, quick, easy-to-prepare vegetables was to learn and use the best techniques for bringing out their flavor, texture, and color. Vegetables prepared using these techniques became the star of the meal and transformed the entire eating experience. I learned other techniques, too, building a repertoire that made my cooking easier, faster, and a source of tastier foods. BUILDING ON GRANDMOTHER'S ADVICEMy grandmother was known in her small Kentucky town as a fabulous cook whose advice was to “Always start with a good recipe.” I followed it for years. But mastering a few good techniques and applying them in myriad ways raised my cooking to a higher dimension than following recipes ever would. In the same vein, learning and applying the best techniques for health raises people’s health and well-being to higher dimensions than diet and fitness ever can on their own. As in cooking delicious food, the underlying techniques can powerfully influence the outcome. EFFECTIVE TECHNIQUES ARE AVAILABLE BUT NOT WELL KNOWNSo, where can we find effective techniques for building and enhancing health? There is an ongoing fascination with human populations from around the world who experience high levels of energy, vitality, and health throughout their unusually long life spans. Like my grandmother, these people remain active, physically strong, and emotionally composed. They build and sustain this capacity through nutrient-rich eating, daily physical activity, positive attitudes, collaborative societies, and cooperative environments. We may think that these high vitality societies are mostly found in mountainous or coastal regions, but people with high vitality throughout their long life spans can be found in all geographies. Culturally the steps on their paths to health power may look different, but the fundamental techniques are the same. Creating a foundation by learning these techniques and using them consistently over time transforms lives. “To live for a time close to great minds is the best kind of education,” writer John Buchan tells us.
