What a lovely group we had for the Autumn Wild Food & Cooking Weekend. We made wild game and mushroom pie, pit roast venison haunch with garlic, honey glazed carrots and parsnips, fillet venison steak cooked directly on the embers and seasoned with one of Kev’s home made concoctions, venison jerky, hawthorn fruit leather, flat breads with various wild nuts and seeds, dampers, a summer pudding and a lovely loaf cooked in a Dutch oven. All were prepared, cooked and eaten over the weekend, using just an open fire and a relatively small selection of pots, pans, rocks and sticks. We topped off the feasting with a fine selection of hedgerow tipples courtesy of Tim B on Saturday night. The course finished on a high with the foraging quiz ensuring that everyone went away feeling confident that they can correctly identify a good number of important plants and remember what they’re used for. A great weekend, fantastic food and a lovely group.
