PIZZA HUT'S DETROIT-STYLE PIZZAPizza Hut U.S. has launched a new Detroit-style pizza range that replaces the traditional round shape with a rectangular crust. The new range was in development for over a year and successfully trialled at select locations. Each new pizza contains cheese all the way to the edges to create a crisp, thick, caramelized crust and is loaded with toppings and a signature tomato sauce on top. The new recipes include Double Pepperoni, topped with regular and crispy cupped pepperoni slices; Double Cheesy, covered with two types of cheese; Meaty Deluxe, loaded with bacon, Italian sausage and crispy cupped pepperoni; and Supremo, topped with Italian sausage, red onions and green peppers. 2. BRITAIN'S PIZZA FAVOURITES REVEALEDGoodfella’s surveyed 2,000 Brits on their pizza preferences and almost a third of respondents chose Classic Pepperoni as their most-loved pizza topping. Other varieties ranked highly included BBQ Chicken (29%), Margherita (23%), Hawaiian (17%) and Meatball (16%). Majority of respondents go for a cheese-stuffed crust while 6% health-conscious consumers prefer a lower calorie base such as cauliflower. The survey also revealed consumers are becoming more experimental with their topping choice and that demand for frozen pizzas are up 16% on last year. 3. CARSIDE & OTHER QSR REDESIGNSChipotle is testing carside pickup at select locations in California where Chipotlanes are not possible. Consumers can select this new option when ordering from the mobile app which allows staff to bring orders out to the car. Many other chains and independents have rolled out similiar processes to maintain business during the pandemic. Panera is one example who has introduced geofencing technology while Dunkin' Donuts have designated a mobile-order only drive thru lane. 4. CHICK-FIL-A'S SPICY GRILLED CHICKENAfter more than a year, Chick-fil-A has launched a new entrée offering. The Grilled Spicy Chicken Deluxe Sandwich is made with grilled chicken breast marinated in a spicy seasoning and served on a multigrain brioche bun with Colby-Jack cheese, lettuce and tomato and comes with a side of Cilantro Lime Sauce that was created specifically for the new sandwich. Since proving successful in test markets, the Grilled Spicy Chicken Deluxe Sandwich will be available across all U.S. restaurants until the end of April, starting at $5.39. 5. SHARE OF STOMACH 2021 REPORTAccording to Deliveroo’s Share of Stomach 2021 report, 85% of customers order delivery more often or the same as they did before the pandemic. The data revealed that 65% of UK consumers agree they are spending more on takeaways to give themselves something to look forward to, more restaurant meal kits are being ordered to recreate favourite dishes at home and less hangover food is being ordered than before the pandemic. The most-ordered items are burgers, Chinese, fried chicken, Indian and pizza. 6. DAPHNE'S NEW PITA SANDWICHESDaphne’s, the California-based chain owned by Elite Restaurant Group, has launched four new limited edition pita sandwiches that offer flavour combinations for every palette whilst staying true to its Mediterranean roots. The Honey Chicken Pita features chicken and cucumber tomato salad topped with honey mustard while the Cali Pita is loaded with hand-carved gyro or grilled chicken and topped with feta cheese and onions. For more intense flavours, the Zesty Steak Pita includes grilled steak, horseradish, seasoned tomatoes and mozzarella and the Shawarma Pita has spice-marinated chicken shawarma, pesto, mozzarella, roasted tomatoes and feta cheese. 7. BIRRIA RED TACOS ON THE RISEQuesabirria de res tacos, or red tacos, are taking over Texas’ street food scene. Inspired by a traditional Mexican stew that uses goat meat, they have recently been made popular by the La Tunita 512 food truck owner, who substituted the goat meat for Texan Brisket. The tacos crunchy shell is filled with succulent adobo-seasoned beef, Monterey Jack cheese, onions, cilantro and salsa de arbol. Many other taco trucks throughout Texas have adopted this dish while adding their own unique flair. 8. SPECIALTY FOOD INNOVATIONSThe Specialty Food Association held a virtual exhibition where more than 10,000 new food and drink products were showcased earlier this month. Innovation focused on rising trends like functional foods, snacks, plant-based, restaurant-quality food at home and experimenting with new flavours and ingredients. Some standout launches include Fifth Tastes Foods’ range of Chili Crisp spicy umami condiments and Zelo’s Greek Cuisine Classics Souvlaki & BBQ herb and spice blend. 9. REGIONAL BBQ STYLES EXPLAINEDHot sauce is currently in the spotlight with its ability to add an extra kick to a variety of familiar dishes. Teriyaki Madness has launched their own new Mad Sauce that takes tastebuds on a journey of spicy-sweet surprises. It can be used as a dipping sauce or added to the chain’s signature bowls to create a Mad Spicy Chicken, Mad Spicy Steak Teriyaki, Mad Spicy Orange Chicken or Mad Spicy Tofu Teriyaki. McDonald's is bringing back their Mighty Hot Sauce to U.S. locations in February which is made with a blend of crushed red and cayenne peppers and a hint of sweetness.
