We want to extend a Heaping round of applause for all of you that took the time to vote for us in this year’s YellowScene “Best of the West” . Colterra Food and Wine took home the award for Best Overall Restaurant, while SALT  was voted Best Contemporary American. Bradford's Modern Bolognese

The Modern Bolognese recipe is a lighter version of the classic dish intended to feed many people of modest and humble means with the use of the cheaper cuts of meat such as skirt steak and pork and bacon. Bradford feels that it is some of the best food that he's ever tasted has been of peasant origin, and Bolognese sauce is one such example. It is so versatile could be used for gnocchi or pasta with polenta.

Sautéed P.E.I. Mussels with Honeycrisp Apples & Jalapeno

This recipe is a nice twist on a traditional mussel dish. The sweet apple cider and tender belly bacon really accentuate the spice of the jalapeno and the tartness of the lime. The brininess of the mussels is still allowed to shine through and create a nicely balanced dish.

Pappy’s Pipe Cocktail

Pappy’s Pipe is one of SALT’s most spirit forward creations, a drinker’s drink one might say. The whiskey has malted barley, which gives a creamy mid-palate finish, but don’t let it fool you.  At 94 proof it still has a big kick. Our bar manager, Ryan Arndt tells us where his inspiration came from, “One of my childhood memories is the sweet cherry smell of my grandfather’s pipe”. 

Your Voice Does Matter

The EPA is finally listening to all your letters, emails and public outcry regarding the proposed Pebble Mine. Evoking the Clean Water Act, the EPA has essentially put a hold on the all mining in the Bristol Bay watershed. The agency feels the mine would "foul streams feeding into the bay, the fishery for half the world's wild salmon." All of those who have been fighting this battle for the past decade have known this but with the EPA's joining the ban wagon it will be even harder for Pebble Mine to ever come into existence! Special thanks to all of you that attended and contributed to our Bristol Bay Salmon Dinners.

We've switched things up and have decided to celebrate boars and bourbon in March, which just means more time for all of you to save the date! Join us at SALT for our first ever Boar & Bourbon Dinner. We will be partnering with the award winning Breckenridge Distillery for their outstanding bourbon. The SALT chefs will be bringing in a whole boar for an incredible 6 course menu. While our talented mixologists will be whipping up some amazing bourbon cocktails to be artfully paired with each dish. That time of year has come around again when the people of Boulder vote for their best of the best. Best of Boulder has been running for 16 years! We've been voted in before and we want to keep that streak running. Voting is open for the entire month of March. So thank you for getting out and there and voting, Boulder!
