Bradford's Modern Bolognese
The Modern Bolognese recipe
is a lighter version of the classic dish intended to feed many people of modest and humble means with the use of the cheaper cuts of meat such as skirt steak and pork and bacon. Bradford feels that it is some of the best food that he's ever tasted has been of peasant origin, and Bolognese sauce is one such example. It is so versatile could be used for gnocchi or pasta with polenta.
Sautéed P.E.I. Mussels with Honeycrisp Apples & Jalapeno
This recipe is a nice twist on a traditional mussel dish. The sweet apple cider and tender belly bacon really accentuate the spice of the jalapeno and the tartness of the lime. The brininess of the mussels is still allowed to shine through and create a nicely balanced dish.
Pappy’s Pipe Cocktail
Pappy’s Pipe is one of SALT’s most spirit forward creations, a drinker’s drink one might say. The whiskey has malted barley, which gives a creamy mid-palate finish, but don’t let it fool you. At 94 proof it still has a big kick. Our bar manager, Ryan Arndt tells us where his inspiration came from, “One of my childhood memories is the sweet cherry smell of my grandfather’s pipe”.
