PARTICIPANTS' ACTIVITIESOn 26 July the Silesian Zoological Garden / Chorzów ZOO hosted, for the second time, an original cooking-event related to the Which Fish? Campaign, during which the well-known local chef, Marcin Czubak, prepared a seafood-based dish live and the public could learn about choosing marine products to minimize the risk of overfishing. (Spoiler alert: recipe at the end of the text!)The Silesian Zoological Garden is located between Chorzów and Katowice and over 500 kilometres from the Baltic sea. Despite the distance, as a Member of EAZA, we want to engage in common initiatives, including those associated with the sea and the coast. Our main goal is to convince people that we all have a huge influence on the condition of the sea and its inhabitants, no matter how far from it we live. As fish consumers are a big part of the population, we want them to be more aware of their own impact on nature and know what they can do for it by promoting responsible consumer choices. Culinary TV programmes are very popular in Poland. We thought that their participants, as well as well-known celebrities, could be good ambassadors for the campaign and would speak to other cooks, chefs, bloggers and to all people who like cooking, and not necessarily visiting the zoo... Read more. © Silesian Zoological Garden WHAT DO YOU KNOW ABOUT...The European plaice?This bottom-dwelling flatfish lives at the bottom of the sea. It can camouflage itself in the sand or the vase. By mimicry, its skin changes colour to match the surrounding background. It measures on average between 25 and 45 cm but can reach 95 cm! © Arnstein Rønning RECIPE: Welsh Rarebit of the sea Ingredients (4 people) • 600 g grated cheddar • 4 fillets of Plaice • 4 tablespoons of mustard • 15 cl Amber Beer • 4 to 6 slices of sandwich bread • Pepper Time
Cut the plaice into fillets. Turn on the grill function of your oven. In a saucepan, melt the mustard, cheddar and half the amber beer. Soak the slices of bread with the remaining beer, then place them in small ramekins. Then layer the fillets of plaice, then the melted cheddar and pepper. Brown for 5 minutes, and it’s ready! © Mr GoodFish Programme EVENT OF THE MONTHA new exhibition on sustainable consumption has been launched this summer at Nausicaá, the French National Sea Centre. Florence Huron, Which Fish? Campaign co-Chair, tells us more about it.The Mr. Goodfish programme is celebrating its 10th anniversary in 2020! Initiated in March 2010 - by Nausicaá in France, the Acquario di Genova in Italy and by the Aquarium Finisterrae in Spain - the programme aims at promoting sustainable seafood consumption. Therefore, Nausicaá has just launched a new exhibit dedicated to this programme. A young kitchen clerk – whose face surprisingly reminds us of Alfredo Linguini in Ratatouille - calls visitors in a mix of French and English because he needs help. Very sympathetic but a little goofy, the poor young man did not buy the right fish and he needs the visitors of Nausicaá to repair “his little mistake”. This is the starting point of the new scenography of the Mr. Goodfish exhibition space! Sitting at the “Seafood Digital Bar” counter, visitors are able to follow Mr. Goodfish’s recommendations, learn about the status of fish stocks, check fish size and seasonality, and, finally obtain recipes. Let’s eat fish, but seasonal fish! In front of the food bar, actors of the seafood sector (fish retailer, fishmonger, fisherman and fish farmer) answer the questions of a consumer and explain the benefits of a sustainable seafood consumption to the visitors.
