Craveability and satisfaction are key elements that drive the evolution of handhelds to meet current-day needs making it one of the most dynamic categories in foodservice. Flavour & the Menu magazine has identified 5 modern handhelds that pack flavour. The first highlights the Southern classic fried chicken sandwich, updated through spicy aioli and Asian slaw, which complement the underlying smokey notes. Caramelised onion and mushroom steak melt, blackened chicken sandwich, mac and cheese brisket and Italian pork belly sandwiches are also renewed with bold flavour combinations. 5. WHOLESALERS REDIRECT STRATEGYCompanies across the UK are changing strategy, with restaurant and catering revenues drying up due to the recent lockdown implications. A large number of vendors from the London New Covent produce market have also started to accept orders from the public, with a notable uptake already. Several supermarkets have also imposed limits to simplify their offerings and ranges, resulting in a 15% rise in output. But this tactic will be monitored as shopping and buyer behaviours regulate. 7. TIME FOR BREAKFASTOver the years, breakfast has proved to be a consistent category of new product development growth across Europe. NPD found the top European countries to purchase in this category are Italy, Spain, France, Germany and Great Britain, respectively.
