7. Beef fraud: Counterfeit products the biggest threat to supply chain

In a 20-year analysis of reported food fraud in the beef supply chain, researchers have found counterfeiting to be the most common type of fraud. "By better understanding the fraud which is taking place, we can target fraud protection, detection, and mitigation," Kelsey Robson from Queen's University Belfast says.

8. Spices may reduce E. coli O157

Tahini is a common food product in the Mediterranean area that is used as a main ingredient in variety of ready-to-eat foods. The objective of the current study was to investigate the inhibitory effect of thyme oil or cinnamon oil on E. coli O157:H7 viability in tahini and diluted tahini at different storage temperatures.
