California Wine Dinner ~ Thursday, January 16th  6:30pm $65 per person

California’s wine country is as diverse as the people and wines that hail from the Golden State. Throughout the dinner, we will be exploring California’s different regions, starting in the Russian River Valley for Chris Donatiello’s plush Chardonnay, then to Sonoma County for Banshee’s elegant and fragrant Pinot Noir,  next to Monterey for Split Creek Farms supple and spicy Merlot and finish in Napa for Pied a Terre’s robust and vibrant Cabernet Sauvignon. Each region produces exceptionally diverse wines, with unique personalities and characteristics derived from the climate, soils and people that produce the wine grapes grown there.

Inspired by the season and California’s cuisine, Chef Michael Drazsnzak has created a wonderful menu to pair with these Californian beauties. So please join us for a taste of California. For reservations call 303.652.0777

Winter Pomegranate Salad

This time of year we're all yearning for a little freshness to our palates. We often forget that salads aren't just for summer. The winter pomegranate salad  is a perfect example of utilizing what winter has to offer. Pomegranates are a seasonal winter fruit with small, bright-red seeds. The edible jewels not only add color but an intense pop of flavor that is sweet and tart at once. 

Duck Liver Pate

Duck liver Pate is inexpensive, luxurious and dangerously easy to make. You can make this ahead of time for your post holiday parties since it will last a few days in the fridge. The use of the duck livers is an elegant and less expensive option to the typical foie gras component. Its an old time Colterra favorite recipe and sure to be one of yours as well.

A Warm Welcome to our new                          General Manager Vanessa!

Vanessa Lucio comes from many years of restaurant experience. Her family has owned a chain of restaurants in Colorado since the 70's which she helped her father and late grandfather run for several years. Loving to travel and experience different cultures she has been to dozens of countries. She has also worked in restaurants across the US as well as Mexico, Costa Rica, Thailand and China.  Her love of horses drew her back to Colorado where her family raises quarter horses and as a Boulder native she was pleased to come back to her home town and to bring her love of food and drink to SALT the Bistro.

I feel very strongly about adding my voice to all of yours that are speaking up about banning the use GMO's in this country.  It is truly mind blowing to think we are one of the only developed nations to not restrict or outright ban the use of GMO's.  We don't even require the disclosure of the use of GMO's on our labeling.  Here are a few quick facts:

1. The US has approved GMO's based on studies conducted by the corporations that created them and profit from their sale.

2. Evidence connects GMO's with health problems, environmental damage and violation of farmers’ and consumers’ rights.

3. Almost all developed nations do not consider GMOs to be safe.
