Jumping for Joy!

That’s right spring is here! Despite those pesky reminders of winter still hanging about, as of March 20th, the season has officially started. The birds are singing and so are we. Sugar snap peas and asparagus, yep it's safe to say we're twitterpated.

Easter brunch at Colterra has never been so delicious! With the menu featuring items like, Roasted Local Leg of Lamb Provençal, Bread Pudding French Toast, Crepes Grand Marnier, and House Smoked Wild Salmon Benedict, we know you won't be disappointed. Fava Bean Puree

The Fava Bean Puree is one of our favorites not only for its delicious flavor, but for its amazing health benefits. Fava beans are high in folate, iron and dietary fiber. So break out those snap peas and other amazing spring time vegetables and start dipping! 

SALT's Tiramisu

The name Tiramisu, is of Italian origin and translates to "lift me up" or "pick me up". Traditionally the ladyfinger cookies are soaked in coffee and a mousse consisting of mascarpone folded with an Italian meringue. The use of amaretti cookie is a classic end to an Italian meal, especially in Veneto, Friuli Venezia Giulia, and Piemonte. It's old school meets a modernist approach. This tiramisu a great way to end a perfect meal at SALT, or in your own back yard.

Welcome Cory!

Cory Knudson brings his love of food, drinks and people to our family at Colterra as our new General Manager. Growing up in Texas, he worked in restaurants to help support himself through school at the University of Texas in Austin. The mountains and skiing in the winter, combined with the beautiful summer weather drew him to Boulder in '95. He began work at Old Chicago as a bartender, working his way up to Senior Managing Partner. He moved to Portland, OR with Old Chicago to begin opening up new restaurants but Colorado already had him hooked. Thanks to Colorado's beautiful mountains and weather, and his passion for customer service, business, and amazing people he has joined our team at Colterra. We're excited to have join our team!
