BRINGING PERSIA TO THE PEOPLEThe new Persian delivery-only restaurant, Noushe Joon, is causing a buzz in London. Noushe Joon aims to make authentic Persian dishes more accessible and adaptable to modern palates. Signature dishes include tahchin and loobia polo which are delivered to customers in biodegradable packaging. The pandemic has changed eating habits and people are now choosing to explore different cuisines and food formats. WENDY'S BOURBON BACON BURGERWendy’s has a new addition to its Made to Crave sandwich range called the Bourbon Bacon Cheeseburger which pays homage to two classic American icons – cheeseburgers and bourbon. The launch combines sweet with savoury through a Bourbon Bacon sauce, American cheese, crispy bacon, crunchy onions on a toasted bun. Previous Made to Crave offerings including the Pretzel Bacon Pub Cheeseburger and Jalapeno Popper Chicken Sandwich performed well so the culinary team believes this new combination will satisfy fans. 3. FOOD & DRINK INDUSTRY FORECASTThe UK food and drink market is forecast to grow 12% this year, according to the latest Eating In vs Dining Out report produced by IGD. The increase is driven by strong retail growth in quarter one and a strong foodservice sales forecast for the second half of the year driven by pent-up demand. Foodservice will increase to £18.6 billion and while some of this growth may impact retail, increased levels of home working, at-home social gatherings and financially stretched shoppers allow for continued retail growth. The key to unlocking opportunity is understanding the K-shaped recovery and its impacts on shopper behaviour. Affordability and accessibility are the two watchwords for the eating out market. 4. SCRUMPTIOUS SUMMER PREVIEWThis year’s Scrumptious Summer range from Waitrose features Middle Eastern flavours and fruity notes. Perfect for picnics in the park, shoppers can pick up Chicken Shawarma King or Mango & Lime Chicken Thigh Kebabs; Spanish-style Pork, Chorizo & Manchego Whorls; and for dessert, Rhubarb & Custard Trifle. The new offerings are packed with flavour to bring consumers a bit of escapism at home. 5. FLAVOUR DEVELOPMENTSKerry highlights seven trends impacting flavour development in their latest Global Taste Report. The biggest takeaway is that nostalgic flavours are still gaining momentum as consumers continue to gravitate toward comforting and familiar foods. Independents are invigorating familiar favourite concepts by concocting interesting twists to classic comforts for example a Bacon Sriracha Mac and Cheeseburger. Other trends highlighted in the report are seasonality, enticing eats, and a healthy halo. 6. SUSTAINABLE MISSION FOR RETAILERSSustainability is top of the agenda for most major supermarkets in the UK. Morrison’s is on a mission to reduce plastic by reintroducing its refillable container service at its fish and meat counters; potentially saving 2,000 tonnes of plastic a year. The retailer has also been working on new lighter-weight recyclable trays; removing an additional 900 tonnes of plastic. Meanwhile, nearly 40 UK food businesses have threatened to stop sourcing agricultural products from Brazil over proposed land reforms which could accelerate deforestation in the Amazon. 7. WALKERS FOOTBALL-THEMED FLAVOURSWalkers Crisps has released four new football-themed flavours: Steak and Ale ‘Pie-nalty’, Chicken ‘Tackle’ Masala, ‘Hotshot’ Hot Dog and Sour Cream And Chili ‘Kicker’. With football back in the mix this summer, Walkers’ limited edition ‘Footy Favourites’ are inspired by match-day meals. In addition to these new flavours, Salt and Lineker crisps are back in stores on May 17th as grab bags, sharing packs and multipacks in major retailers. 8. CHIPOTLE STAYS AHEAD OF THE GAMEAccording to the latest Top 500 Restaurant Report from Technomic, Chipotle is the highest grossing fast causal with total sales of almost $6 billion and growth of 6.5% in 2020. The Mexican chain has managed to stay ahead by being an early adopter and investing in digital resources well before competitors. Chipotle launched their order ahead drive thru Chipotlanes before the pandemic hit which gave them a head start in handling the influx of digital business. They also took an aggressive approach to building their digital rewards programme which launched in 2019 and now targets about 20 million users. 9. POPEYES LOCALISES SIGNATURE ITEMPopeyes Louisiana Kitchen took three years to perfect its premium fried chicken which is now available worldwide. The chain has adapted the popular sandwich to 25 menus around the world to the tastes and supply chains of different cultures while retaining its signature elements.
