BURGERS MOST CRAVEABLEEuropeans crave more burgers, according to German researchers Dalia whose survey asked what types of food French, German, Spanish and UK consumers would like to see more of. American/burgers featured in each country’s top 5 wish-list but there is also appetite for more Chinese, Mexican and locally-inspired cuisine. Among other favourites; Spain (barbecue), Germany (Greek), France (sushi) and the UK (Indian food), with Spanish and UK consumers wanting more healthy food options. Note Pizza Pai’s recent initiative, using a regional ‘play on words’ to promote a local recipe - the Pizza Welsh (ham, egg and chips, Worcestershire and cream sauce with honey mustard and oregano) –- “récauffer votre chtite faim!” 2. MCDONALD'S NINJA BURGERSpeaking of burgers, we like the sound of McDonald’s Singapore’s latest and very original launch– the Ninja Chicken Burger (crispy chicken thigh, glazed with sweet Nanban sauce, with shredded white cabbage and Japanese tartar sauce in a charcoal sesame bun). Along with a Matcha McFlurry, this joins the return of Samurai Chicken Patty in Teriyaki sauce, a Samurai Beef Burger and Seaweed Shaker Fries (nori flakes). Watch McDonald’s Ninja Chicken Burger video (in English) here> 3. UNILEVER & LIDL TRIAL MEAL KITSUnilever is trialling a meal kit delivery service in the Netherlands. Its partner for ‘Knorr Fresh Meal kits’ is Picnic, a grocery delivery start-up with estimated 80% share of the Dutch grocery delivery market. Similarly in the UK, Unilever’s Hellmanns brand is working with another delivery service start-up company, QuiQup. Meanwhile Lidl is launching a recipe box business delivered to workplaces in Switzerland, describing its contents as “seasonal, healthy and quick”. We’re seeing a lot of activity in the meal kit arena, since HelloFresh pioneered the concept in 2010/11, with winners and losers expected to emerge as it evolves and matures. Logistics and clever product development are considered key. 4. WAITROSE' BIGGEST FOOD TRENDSWaitrose’ annual Food & Drink Report 2017/18 counts Japanese 'dude food' among its hot tips for 2018– ie food inspired by America’s southern states fused with Japanese influence. Examples include Yakitori skewered chicken or deep-fried tofu in broth. Indian street food is set to surge in popularity with a preference for smoked, seared and grilled foods such as spiced burgers or lamb keema tacos. Demand for high protein foods grew in 2017, and this is expected to continue into the new year along with the popularity of meat snacks, grains, seeds, shoots and pulses. Read the Waitrose food trends report here >> 5. GOODBYE HALLOWEEN, HELLO CHRISTMASGet set go – the race for share of festive lunchtime spend has begun. From Greggs’ Turkey, Bacon & Cranberry Roll, to Costa’s festive Turkey Cranberry & Bacon Toastie or Starbucks’ Turkey Club Flatbread. Not just turkey, ‘tis also the season of Pigs In Blankets – EAT’s new range includes a pot of sausages wrapped in maple cured bacon with a cranberry dip. Urban Eat is celebrating the season with Piggies Under Blankets Sub roll. 6. TEXTURE PUT TO THE TEST IN 2018‘Multisensory’ and ‘scientifically-engineered’ products are 2 of 5 strong trends set to take the food and drink market by storm over the next year (Mintel). Changing consumer demands show that full disclosure is key, particularly regarding how and where the food is made. As modern life takes its toll, consumers are looking for food that provide nutritional, physical and emotional benefits. Personalisation makes “shopping as effortless as possible” and suggests retailers need to “leverage technology to establish new levels of efficiency,” including home delivery, customer recommendations and subscriptions. According to Mintel, texture is the latest tool to deliver “share-worthy” experiences, especially for Millennial consumers. 7. WHEN BURGERS & WINGS COLLIDETwo American groups FAT Brands and Charlie FB are joining forces to make an impact on the increasingly saturated UK burger market. With 200 restaurants across 32 countries, FAT Brands is embarking on a joint venture with chicken wing specialist Buffalo Express to open an estimated 15 shared outlets across the UK offering “all things Americana”. For an insight to what this might look like, check out the LA website for Fatburger & Buffalo Express> Another mouth-watering flavour collision is McDonald’s new Buffalo Bacon Signature Crafted Burger sandwich complete with spicy buffalo sauce, blue cheese sauce, Applewood smoked bacon, trialling in the US. 8. BLURRING DEFINITION OF 'HOME MADE'In the US, there is increasing blurring between home-made and restaurant meals, with a growing number of operators (still small) recognising this new channel to market. In 2016 (y/e February 2017), some 18% of in-home meals included at least one ready-to-eat item from foodservice, up from 15.5% in 2015. This need is met by both delivery and ‘grab ‘n go’ channels. Chicken Salad Chick’s has established a Quick Chick section at the front of each restaurant, offering to-go containers of gourmet salads and sides. Al Forno is a pizza chain who offers partially cooked Neapolitan pizzas that customers finish in their ovens at home (no doubt inspired by Papa Murphy’s). 9. RE-HASH OF OLD FAVOURITESSince the clocks went back, we simply need more old-fashioned comfort food. Why not corned beef hash? In post-war European countries like Britain, Ireland and France, it became popular as rationing limited the availability of fresh meat. Foursquare highlights some London restaurants serving this up in style but also look to the US for some inspirational revamps. Dish Society offers Pork Belly Hash with jalapeños, roasted red peppers and avocado Hollandaise. The Peached Tortilla, Texas, tops its Brisket Hash with kimchi miso corn, onion jam and a poached egg. Specialist Hash Kitchen offers Carnitas Hash with Coke-braised pork, and Herb-Fried Chicken Hash with fried leeks and a warm maple reduction.
