If you don’t currently use Google Chrome as your web browser click here to download. 1. 3 NEW DINING STRATEGIESSome 8% of global foodservice orders are expected to be made online by 2021 (Euromonitor), hence a rising need to keep the dine-in experience relevant. Tactics include 1) retailers using foodservice hubs and/or entertainment to attract and retain customers for longer (eg Debenham’s and Patisserie Valerie, eg London speakeasy-style bar The Little Yellow Door). 2) Also consider targeting niche dining options such as the elderly or parents with young children (eg Amélie + Moi in Belgium). 3) Informal dining – the ongoing trend towards less pretentious, food-first dining experiences (eg Achoclonados, Chile where diners customize bowls of corn with different types of meats, salsas, and veggies) – watch it here >> 2. TOTAL & JUMBO TARGET COMMUTERSCheck out Dutch petrol station Total’s latest concept called Cosie (Coffee, Sandwich, Inspiration & Experience). The Cosie initiative is tailored to Total’s on the go customers, aimed at creating a comfortable environment where customers become guests. Similarly, Jumbo, one of the leading supermarkets in the Netherlands with over 580 locations has opened its first Jumbo City convenience store format where consumers can buy freshly prepared meals for sit down or takeaway. The store is located in Eindhoven’s central train station and aims to offer “ultra-fresh food”, taking on Albert Heijn in targeting the quality-convenience-led under-40-year-old consumer.under-40-year-old commuter. 3. CHRISTMAS DINNER HACKSMeal kit companies HelloFresh and Gousto have launched new Christmas-themed recipe boxes. HelloFresh’s Christmas box contains butter-basted roast turkey with pigs-in-blankets, rosemary roast potatoes, brussels sprouts and a selection of sides – all the ingredients to make a full festive family dinner. Meanwhile competitor Gousto has released a gourmet 3 course Christmas ‘Get-Together’ box, featuring balsamic and redcurrant glazed pork loin, pork and sage and cranberry sausage rolls. Its box also includes caramelised mushroom & cheddar brioche sliders, beetroot hummus with baby vegetable crudités and a king prawn cocktail, along with a selection of desserts. 4. TRENDJECTORY 2018What culinary themes will be having an impact on global menus in 2018? According to Sterling-Rice Group (SRG) 6 trends are emerging such as Slow Dough, Umami Breakfasts, Gut Health, Burmese Food and the rise and rise of Instagram. Expect to see a different approach to pizza crusts – as more craft pizzas will be less processed and easier to digest. Umami will be added to more breakfast menus, adding a savoury taste to menu items like crepes (jianbing) incorporating different flavours inspired from Thailand, Vietnam, and Korea. 5. CPK'S GOURMET SPICY SIDESUS chain the California Pizza Kitchen (CPK) has launched its fall menu, including a mac ‘n cheese with a gourmet twist. The Spicy Short Ribs & Chipotle Mac ‘N’ Cheese consists of boneless beef short ribs braised in Pinot Noir and smoked ancho chile, served over spicy chipotle mac ‘n’ cheese with grilled shishito peppers, fresh cilantro & scallions. Another recent addition and now permanent menu item is Piadinas, a folded pizza style sandwich filled with for example Oven Roasted Turkey & Brie. 6. TACO BELL & NANDO'S TRY DELIVERYMexican chain Taco Bell’s expansion plans are well underway in the UK with 4 restaurants targeted for the Liverpool area, bringing the total to 21 locations nationwide. It’s also launching its first mobile delivery with Deliveroo, available in 11 out of the current 17 restaurants. Nando’s, Portuguese-themed chicken chain, has plans of its own to launch a delivery service in its 34 UK locations. The chicken company is partnering with 3rd party delivery companies and using FlyPay’s Flyt platform to process orders. 7. SMART RUSSIAN PIZZARussian pizza chain, Dodo Pizza is making its UK debut, opening its first ‘artisan pizza delivery shop’ in Brighton later this month. Dodo Pizza currently operates in 10 countries (including Russia, USA, China, and now the UK) with over 250 outlets. Founded in 2011 by 33-year-old entrepreneur Fedor Ovchinnikov, Dodo Pizza is the leading chain in Russia competing head to head with global giants Domino’s and Papa John’s. Digital integration is core to Dodo’s growth strategy, similar to Domino’s, claiming to offer the first pizza by helicopter drone back in 2014 for example. 8. SAINSBURY’S DIAL ‘N COLLECT PIZZASainsbury’s has announced a new trial takeaway pizza service. Customers will be able to ‘create their own’ and order takeaway pizzas (along with sides, salads and drinks) by phone and collect them in-store when it suits (minimum wait 30mins). An important change is that pizza shoppers can pay at the pizza counter to avoid queues at the checkout. The trial will run for three months in three of their Bradford stores, and if successful could be rolled out nationwide “ taking on Domino’s”. Price will be a key driver of purchase – ranging from £3.60/4.00 for 10” and 14” stonebaked pizzas thin or deep pan, with the option of adding extra toppings. 9. BURGER TOPPINGS GET SLOPPYWe can’t help noticing a trend towards ‘wetter’ gourmet-style burger toppings. Shake Shack’s new Chili Cheeseburger is topped with smoked and slow braised beef chilli. KFC Germany’s festive Winter Tower Burger features Red Cabbage & a Fruity Plum & Cinnamon Sauce. Burger King’s latest LTO (in the US) is a Chicken Cordon Bleu Sandwich consisting of crispy chicken, tomato pepper sauce, black forest ham and mozzarella. Meanwhile in the UK, there are exciting plans afoot for Burger King, which is set to receive significant investment from new majority owner, private equity group Bridgepoint – watch this space for new of “brand reinvigoration” and expansion.
