TOKYO PIZZA - BALANCE IN THE DETAILSChefs around the world are pushing the limits on what constitutes a pizza pie. Many regions seem to have their own take on the Italian favourite with Tokyo pizza being the latest rendition in the spotlight. The creation started in Susumu Kakinuma’s pizzeria where he took inspiration from his travels through Italy. Tokyo-style pizza has a poufy, rippled crust that is pinched around the edge and has salt sprinkled over the top and on the floor of the oven before going in. There is great attention to detail and a balance of ingredients that makes these Japanese pizzas perfection. 4. MORE PLANT-BASED FOR BBQ SEASONSupermarkets are expanding their plant-based offerings for summer. The Co-op's Gro brand will introduce six new products, including meatless burger bites, cocktail sausages, buffalo hot wings and ribs. Earlier this month, the grocer lowered prices of the range as it believes customers should not have to pay more to eat meat-free. M&S is also expanding its Plant Kitchen range with five new products created for BBQ season: crispy barbecue wings, no-lamb koftas and plant bangers. PANDEMIC-ERA CHANGESThe pandemic has given foodservice providers the chance to learn more about how to interact with their consumers. Mobile ordering, payment and loyalty programmes, like that which Chipotle and Starbucks offer, have accelerated to reduce social contact.
