Food & Wine of the Mediterranean Dinner ~ Thursday, February 20th 6:30pm  $65 per person

On coasts kissed by the crystal clear blue water of the Mediterranean grow some of the world’s fines and unforgettable grape varietals. The wines at this dinner are unique. Thomas Cusine’s Vilosell is highly expressive with a wide aromatic spectrum of red fruits and spices and Marco De Bartoli is widely recognized as making a Marsala in a league of its own. Newly open in Longmont, Still Cellars is a true micro-distillery. The owners-operators, Jason R. Houston and Sadye Rose W, lovingly hand-craft each spirit from scratch using traditional methods and uncompromising standards. Their Fireside Cocktail is sure to warm you from within as the snow falls outside. 

SALT's Grilled Local Marinated Lamb with Balsamic Braised Lentils

Colorado's lamb is known through out the USA for its high quality and upholds our focus of souring locally. The lamb has an earthy flavor that goes well with our seasonal vegetables to create rich dishes throughout the winter months. SALT's talented Chef Derek's Grilled Lamb Recipe is just what we need to warm our hearts and bellies in these cold winter months. 

Call to Action

To label or not to label, that is the question. Or rather what we label! Big foods is pushing to bar states from requiring labels on food that has genetically engineered ingredients. They are determined to keep the public in the dark about what is going into their food. GE foods would even be allowed to be called "natural". There is overwhelming public opposition to this proposal, but our governments need to hear it from the source. Let your voice be heard and tell Congress what you think about this proposal.

Come either night to enjoy the Pasture-Raised BoCo Lamb Shank with roasted garlic smashed potatoes, chili, lime, mint or the Freeform Shellfish Ravioli saffron black pepper handmade pasta dungeness crab, Maine lobster, and oysters or one of the other delicious options. Boar & Bourbon Dinner ~ Wednesday, February 26th  6:30pm $75 per person

Join us at SALT for our first ever Boar & Bourbon Dinner. We will be partnering with the award winning Breckenridge Distillery for their outstanding bourbon. The SALT chefs will be bringing in a whole boar for an incredible 6 course menu. While our incredible mixologists will be whipping up some amazing bourbon cocktails to be artfully paired with each dish. Up and Coming... Denver Restaurant Week!

For one special week in February, 22nd to the 28th, restaurants in and around Denver participate in a  "celebration of the culinary scene in Denver".  Participating restaurants will offer a multi-course dinner for the fixed price of $60 for two, or $30 for one (not including tax or gratuity).  Both  SALT  and  Colterra  will be joining in the festivities this year.
