Tell us about your business/organisation?
We are a collection of restaurants located in Brisbane specialising in Spanish, South American and soon, Italian Cuisine.
What is your role at your organisation?
As I have recently moved into the role of Executive Chef, I am currently ensuring the seamless running of all the kitchens. I do a lot of driving around and problem solving.
What are your key skills and responsibilities?
I’m responsible for making sure the kitchens operate in the most cost effective way while producing a large amount of good quality food that appeals to our customers.
How many people work at your business?
Approximately 80 employees.
What is your favourite place in the precinct?
Stokehouse. Great food, always consistent with the quality.
What do you want BSB members to know about you or your business?
We have a new restaurant opening in May! It is going to be Italian, which I’m excited about as this is my Heritage. Also, I’ve tried our Chef's Pizza… Brilliant!!
What is something people wouldn’t know about your business?
We recently opened Che Asado. It offers a really tasty Breakfast Menu.
What has recently happened at your organisation?
The Sangria Bar recently won BEST BAR with Food for Brisbane Times Good Food Guide 2014.
What have you learnt lately?
How to juggle! Running 4 kitchens, opening another, and preparing for a newborn baby, there is always lots of balls up in the air.
What do you hope to achieve in your industry?
I always try to teach chefs at an exceptionally high standard. I believe the standard of training in the industry these days is really lacking, so I try to do my part in training all my chefs to take ownership and pride in everything they do.
What inspires you?
Going to the Fish, and Fruit and Vegetable markets weekly.
Seeing all the beautiful, fresh, quality produce really inspires myself and the other chefs. Thinking about what’s in season, and how we can incorporate this into menus and specials.

Work smart, not hard.
