An extra course, amuse-bouche, or surprise dessert shows how much care goes into the composition of your menus. It's also an opportunity to show that your skills go beyond what's on tonight's menu.
2. Prepare for Leftovers
Make sure there's more than enough for everyone to have seconds. Better yet, make sure there will be food left over. Leftovers are the easiest way to make sure your clients keep thinking about your food, long after you've left the kitchen.
3. Be Better Than On Time
Punctuality is the best way to make a great impression. If you're cooking for a new client, being behind — even by 5 minutes — can throw off the whole experience, and put doubts in your host's head. You don't want that.
