Recipe Idea

Corn Fritters

Ingredients
420g can corn kernels (drained)
4 spring onions, finely sliced
1/4 cup fresh herbs (e.g. coriander, parsley), finely chopped
Freshly cracked pepper, to season
2 eggs, beaten
1/2 cup milk
1 cup self-raising flour
Extra virgin olive oil

 
 

Method
1. Combine the drained corn kernels, finely sliced spring onions, finely chopped fresh herbs, cracked pepper, beaten eggs and milk in a large mixing bowl.
2. Stir in the self-raising flour until combined.
3. Heat a little extra virgin olive oil in a large frying pan over a medium heat.
4. Using approximately 1/4 cup of batter for each fritter, add to the pan. Cook for 2 - 3 minutes on each side or until both sides are golden brown and the fritter is cooked through. 
5. Repeat with the remaining batter until all fritters are cooked. Enjoy!

Serves 4. Makes 8 fritters.

Water

The human body can last weeks without food, but only days without water. As the body can’t store water, we need fresh supplies every day to make up for losses. Water forms the basis of blood, digestive juices, urine and perspiration, and is contained in lean muscle, fat and bones. The amount we need depends on our body size, metabolism, the weather, the food we eat and our activity levels.

Here are some ways to increase your water intake at work:
1. Set an alarm as a reminder to have a drink.
2. Have a glass of water with all meals and snacks.
3. Keep your water bottle on your desk. If it's out of sight, it's out of mind!
