Recipe Idea

Spanish Tortilla

Ingredients
3 medium white potatoes, peeled and chopped into 1.5cm cubes
8 eggs
¼ cup milk 
¼ cup parsley leaves, finely chopped
Cracked black pepper 
2 tablespoons extra virgin olive oil
1 red capsicum, thinly sliced
1 red onion, thinly sliced
1 teaspoon ground paprika
2 garlic cloves, crushed

Serves 4 - 6 people

 

Method
1. Place the cubed potatoes in a large saucepan and cover with water. Boil over a medium-high heat for 5-10 minutes or until the potatoes are tender. Drain and allow to cool slightly.
2. Whisk the eggs, milk, finely chopped parsley and cracked black pepper in a bowl.
3. Heat the extra virgin olive oil in a large frypan over a medium heat.
4. Add the thinly sliced red capsicum, red onion and ground paprika. Cook until softened.
5. Add the crushed garlic and boiled potatoes. Cook until fragrant and lightly golden.
6. Reduce the heat to low. Pour the egg mixture over the vegetables in the pan and evenly distribute the ingredients.
7. Cover with a lid and cook until the eggs are completely set.

Health Tips

Dietary Fibre

Dietary fibre is a type of carbohydrate, and is the indigestible part of plant foods. It is important for our digestive health and regular bowel movements. Fibre also helps you feel fuller for longer, can improve cholesterol and blood sugar levels and can assist in preventing some diseases such as diabetes, heart disease and bowel cancer. There are three different types of fibre which all have different functions and health benefits: soluble fibre, insoluble fibre and resistant starch.

We should be aiming to include fibre into our diet everyday to see these health benefits. Men need to aim for 30g fibre daily, while women should aim for 25g per day. Some ways to increase your dietary fibre intake include:

  • Eat breakfast cereals that contain barley, wheat or oats
  • Switch to wholemeal or multigrain breads and brown rice
  • Add an extra vegetable to every evening meal
  • Snack on fruit, dried fruit, nuts or wholemeal crackers
