Recipe Idea

Lemon Myrtle Damper

In celebration of NAIDOC Week, here's a recipe that you can make at home featuring the Australian native bush food, lemon myrtle.

Ingredients
2 cups self raising flour + extra to knead
1 teaspoon salt
1 teaspoon dried lemon myrtle
1 cup buttermilk + extra to brush (shake the carton well before opening)
1 tablespoon extra virgin olive oil
Toppings of your choice, to serve

Method
1. Preheat oven to 180°C and line a baking tray with baking paper.
2. Sift the self raising flour and salt into a large bowl. Add the dried lemon myrtle and stir to combine.
3. Make a well in the centre and add the buttermilk and extra virgin olive oil. Use a fork to mix into a soft dough.
4. Place the dough onto a lightly floured surface and knead until it starts to form a smooth dough.
5. Shape into a 15cm rounded disc and place on the prepared baking tray. Brush lightly with buttermilk and bake for 30 minutes or until the bottom sounds hollow when tapped.
6. Slice and serve warm with any topping of your choice.

Makes 1 medium sized damper.

Health Tips

Immunity

Our immune system helps protect us against infection by recognising and fighting against 'foreign' substances entering (or sometimes already in) our body.

During the winter months you are more likely to become unwell as the cold weather forces people to be in enclosed spaces for longer periods of time. This increases the risk of infection, so it is particularly important to look after yourself this time of year.

Here are some ways that you can help strengthen your immune system:
1. Consume a balanced and healthy diet to give your body the nutrients that it needs to function at its best.
2. Regularly partake in moderate exercise to support your immune system.
3. Prioritise rest and relaxation to allow your body to repair and regenerate cells to help reduce the risk of infections.
4. Practise good hygiene techniques such as: washing your hands frequently with hot soapy water or hand sanitisers, covering your mouth when coughing or sneezing, and staying at home if you are sick.
