Recipe Idea

Leek, Silverbeet + Feta Slice

Ingredients
1 tablespoon extra virgin olive oil
2 leeks, halved lengthways, thinly sliced
1 bunch silverbeet, stems removed, leaves roughly shredded
100g feta, crumbled
50g parmesan, grated
1/2 cup self-raising flour
4 eggs
1/4 cup milk
1 garlic clove, crushed
1/4 cup parsley leaves, finely chopped
Cracked black pepper, to season 

 

Method
1. Preheat oven to 200°C. Line a baking dish with baking paper.
2. Heat half of the extra virgin olive oil in a non-stick frying pan over a medium heat. Cook the thinly sliced leek until tender. Transfer to a large bowl to cool slightly.
3. Heat the remaining extra virgin olive oil in the frying pan and cook the roughly shredded silverbeet until tender. Transfer to the bowl to cool slightly. 
4. Add the crumbled feta and grated parmesan to the bowl. Sift in the self-raising flour and mix until combined.
5. Whisk the eggs, milk and crushed garlic in a seperate bowl. Add to the prepared mixture and mix until combined. 
6. Stir in the finely chopped parsley leaves and season with cracked black pepper.
7. Spoon the mixture into the prepared baking dish and smooth surface. Bake for approx. 30 minutes or until golden and cooked through. Allow to cool slightly, then cut the slice into pieces. Enjoy! 

Makes 12 squares.

Extra Virgin Olive Oil

Olive oil is widely recognised as one of the world’s healthiest fats, with Extra Virgin Olive Oil (EVOO) being the highest quality olive oil available. EVOO contains over 30 various types of phenolic compounds, which are powerful antioxidants that help protect the body against cell damage. Studies consistently link a diet high in this monounsaturated fat with favourable effects on chronic inflammation, blood pressure, cholesterol levels and blood glucose levels. In regions where olive oil is a central part of the diet, people tend to live longer too.

Here are some ways that you can incorporate more Extra Virgin Olive Oil into your diet:
1. Use as a dressing on a salad
2. Drizzle on top of vegetables for roasting
3. Incorporate into baking recipes
