Apple and pear season is here again. The possibilities are endless. It's hard to know where to start: baking, canning, fermenting. I'm sharing my apple cake recipe this month. It was a fan favorite a couple of years ago. 

We enjoyed several visits recently from prospective customers to politicians. Pictured are Steve and Ramon of Strictly Gluten-Free www.strictlyglutenfree.com. Sprouted Brown Rice Souffle

Adapted from The Webster Cookbook as published in Southern Living magazine 9/14.

Ingredients:

  • 1 cup cold cooked sprouted long-grain brown rice
  • 3 large organic or pastured eggs, separated
  • 1/2 cup whole organic or raw milk
  • 2 tablespoons organic or raw butter, melted
  • 1/2 cup sharp Cheddar cheese, grated
  • 1/2 teaspoon sea salt or Redmond real salt
  • 1/4 teaspoon black pepper
  1. Preheat oven to 300 degrees. Stir together rice and egg yolks in a medium bowl. Stir in milk, melted butter, cheese, salt, and pepper.
     
  2. Beat egg whites at high speed with an electric mixer 2-3 minutes or until stiff peaks form. Fold into rice mixture.
     
  3. Pour mixture into buttered glass or ceramic 8" square baking dish and bake for 30-35 minutes or until golden.

Peggy's Cheesy Sprouted Grits

Great for breakfast with eggs and bacon, as a side dish, or under a mound of sautéed fresh gulf shrimp. You can omit the cheeses for a lighter version.

Ingredients:

  • 2 cups filtered water
  • 14 oz. chicken stock
  • 12 oz. raw or organic heavy cream
  • 1 1/2 cups sprouted yellow corn grits
  • 2-3 tablespoons raw or organic butter
  • 3/4 cup Cheddar cheese, grated
  • 1/4 cup Parmesan cheese, grated
  • Salt and black pepper to taste
  • 1 teaspoon hot sauce (optional)
  1. Bring first 3 ingredients to a boil. Add grits slowly, whisking in.
     
  2. Reduce heat and simmer for about 10 minutes or until thick, stirring occasionally.
     
  3. Add salt and pepper, cheeses, butter, and hot sauce stirring well to blend. Remove from heat and serve hot.

Peggy's Sprouted Apple Cake

Perfect desert during apple and pear season. Try it with fresh pears or a combination of apples and pears. I've lightened the original recipe with less sugar and the addition of honey.

Ingredients:

  • 6 Granny Smith apples (or other tart variety), peeled and cubed
  • 1/4 cup honey
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 cup plus 2 tablespoons coconut oil
  • 1 tablespoon vanilla extract
  • 3 cups sprouted spelt, white wheat, or oat (g-f) flour
  • 3 teaspoons aluminum-free baking powder
  • 1 - 2 cups maple sugar (I prefer 1 cup of maple sugar. If you substitute honey only use 1 cup)
  • 3/4 teaspoon salt
  • 4 pastured or organic eggs, lightly beaten
  • 1/4 teaspoon soda
  • 1 cup plus 2 tablespoons whole raw or organic milk
  1. Preheat oven to 350 degrees.Peel and chop apples (or pears) into a bowl. Toss with 1 tablespoon lemon juice. Add 1/4 cup honey, cinnamon, and nutmeg to bowl. Toss apples well and set aside.
     
  2. In a large bowl measure flour, sugar, baking powder, soda, and salt. Stir to blend. Add coconut oil and eggs, blending well. Add milk and vanilla, blending well.
     
  3. Pour batter into a well-buttered 9 x 13" ceramic or glass-baking dish. Spoon the chopped apples over the batter. Sprinkle with a little extra sugar if you'd like.
     
  4. Bake for one hour or until done. Great by itself, or with cream, whipped cream, or vanilla ice cream. Enjoy it lightly warmed with a pat of butter and bacon for breakfast.
