Summer 2020 Food Science Alumni Newsletter

Greetings!

Since our last newsletter, the world has changed in remarkable ways that have affected the way we work, teach, learn, meet, communicate and engage with one another. It seems like just yesterday we greeted each other with handshakes and hugs, and now our interactions all take place through screens.


Our program made the transaction to remote learning in mid-March, with student safety our top priority at this time of global crisis. Our students spent the remainder of Spring semester online from their homes, or from their rooms on campus. Our faculty creatively provided compelling online education to prepare our students for careers in the food industry. We are optimistic about our return to campus in the Fall, with all the proper precautions and PPE in place.


As always, if you know of any fellow alumni not receiving this newsletter, please pass it along...and encourage them to contact Robyne (Food Science Program Coordinator). We hope you'll continue to share with Robyne any job openings or internships in your company- as well as any updates you may have! In addition, we'd like to thank you for referring your colleagues, family and friends to our program-and hope you'll continue to do so. We are still accepting applications for Fall, and will be holding a virtual Info Session on June 24th at 6:00pm.

Chapman Food Science Dominates 3MT Competition!

Chapman University held the third annual Three Minute Thesis Competition (virtually, this year), and came away with first and second places winners, as well as the People’s Choice Award. This is the second year that a Food Science student has taken First Place and People’s Choice Awards. A trademarked product founded by the University of Queensland, 3MT™ is a student competition that challenges Masters and PhD students to condense hours of research and pages of manuscript into a three minute talk that effectively explains their research in a way that engages a non-specialist audience. After the first competition in 2008, the 3MT has expanded worldwide with now over 900 universities across 85 countries.

Anna Paula Colella (First place and People’s Choice winner), thesis advisor Dr. John Miklavcic. Anna joined the Chapman Food Science program in Fall 2019. Anna received her bachelor’s degree in Production Engineering in her home country of Brazil, and worked in the automobile industry and in the national parks system before discovering her passion for food science after working as an intern in a powdered beverage company’s research & development lab. Anna is a world traveler who speaks four languages. Check out her winning three-minute thesis. Michelle Tu (Second Place) , thesis advisor Dr. Anuradha Prakash. Michelle joined the Chapman Food Science program in Fall 2018 and will graduate in Summer 2020. A graduate of Cal Poly Pomona, Michelle worked in the Food & Beverage industry for several years before returning to school. Michelle is a master baker & pastry chef-and loves sharing her skills with our grateful students & faculty. In her “spare” time, Michelle is an adjunct faculty member at Orange Coast College. Congratulations to our Product Development Team!

Congrats to Chapman's Product Development Team Champs at SCIFIC ! Their instant cold brew coffee with oat milk was AMAZING! They'll be moving on to the national competition at the end of June, where they'll (virtually) compete with other food science programs from across the county. Over the course of two days, a panel of judges will hear presentations and question the participants on their products. I can hardly wait to share the results-so keep your eyes on the Chapman Food Science Student & Alumni Facebook page for the news!

We hope you'll join us in congratulating our Program Director, Dr. Anuradha Prakash, in receiving the SCIFTS Distinguished Achievement Award. The SCIFTS Distinguished Achievement Award honors individuals who have provided continuous, meritorious service to the food science and technology industry, particularly in the southwestern part of the U.S. You can view her inspiring talk about silver linings on our Facebook page.

Faculty Research Grants

  •  Dr. Lilian Were received a USDA Agriculture and Food Research Initiative (AFRI) Competitive Grant award, for her research on  "Eliminating Undesired Greening In Sunflower Seed Derived Ingredients By Hydrolysis Of Chlorogenic Acid Using An Engineered Esterase", with Dr. Cedric Owens from the A1364 Novel Foods and Innovative Manufacturing Technology) Program totaling $196,405.
  • Dr. Anuradha Prakash recieved a SCiftS grant of $32,000 to purchase a homogenizer to evaluate the effect of processing on extracellular vesicles in bovine milk.
  • Dr. Rosalee Hellberg recieved a SCiftS grant of $8139 to purchase an Eppendorf Mastercycler Nexus Gradient for her research on food safety and food fraud.
