Self Sufficient Me

Recently, Nutrition Australia Qld’s Committee of Management and Executive Team had the pleasure of meeting Mark from Self Sufficient Me. Self Sufficient Me is a blog about self-sustainment by growing our own produce (plant/animal), and self-fulfilment by looking after our health (physical/mental) through exercise and slowing life down a little.

The Qld team were lucky enough to have a tour of his farm and orchard and to try some of the beautiful fresh produce though a delicious morning tea of bruschetta and freshly squeezed orange juice.

What Mark has achieved is truly inspiring and we encourage everyone to have a go at growing some fresh produce - you could start with herbs, tomatoes or snow peas. The possibilities are endless! Stay tuned for more updates on this fantastic new partnership.

Soy, oat, almond, rice, coconut, dairy: which ‘milk’ is best for our health?

A recent article in The Conversation discussed the wide variety of milk and 'milk' alternative options that are now available in the supermarket.

Accredited Practising Dietitian (APD), Leah Dowling, breaks down each of these options in detail to highlight the pros, cons and what you need to consider when choosing a milk or 'milk' alternative.

Recipe Idea

Couscous Stuffed Capsicums

Ingredients
1/3 cup wholemeal couscous
2 large capsicums
1 teaspoon extra virgin olive oil
1/2 zucchini, grated
1 garlic clove, crushed
1 tablespoon lemon juice
50g chickpeas (canned)
1/2 ripe tomato, seeded and finely diced
1 tablespoon dried cranberries
1 teaspoon dried oregano
1 tablespoon fresh parsley, finely chopped
100g feta cheese, crumbled
Salt and pepper, to season

Method
1. Preheat an oven to 180°C.
2. Cook the wholemeal couscous according to packet instructions. Once cooked, use a fork to fluff up the grains and allow to cool.
3. Slice capsicums in half, scoop out the seeds and membranes. Simmer capsicums in a large saucepan of boiling water for 5 minutes. Drain and set aside. 
4. Heat extra virgin olive oil in a frying pan over a medium heat. Add grated zucchini and crushed garlic. Cook for 2 minutes, stirring occasionally.
5. Stir in lemon juice and remove from the heat. 
6. Add cooked and cooled wholemeal couscous, chickpeas, diced tomato, dried cranberries, dried oregano, parsley and 75g of the feta cheese. Season with salt and pepper. Stir to combine. 
7. Fill each capsicum half with the couscous mixture and sprinkle the remaining 25g of feta cheese over the top of each. 
8. Place upright onto a shallow baking dish and cover with aluminium foil. Bake for approximately 20 minutes, remove foil and bake for a further 5 minutes. Enjoy!

Serves 4.

GOLD Cooking Workshops

NAQ Nutrition provides cooking workshops as part of the Brisbane City Council's GOLD (Growing Older and Living Dangerously) program. The program is for people living in the Brisbane City Council area, aged 50 years and over. The workshops are an excellent opportunity to add skills to your cooking repertoire in a relaxed and social environment. People with all levels of cooking skills are welcome, as the workshops are a chance to develop new skills and confidence. Check out the following GOLD session coming up this month:

KRANK Teens School Holiday Cooking Workshops

NAQ Nutrition also hosts cooking workshops as part of the Logan City Council’s KRANK Teens School Holiday program. These cooking workshops are open to people living in the Logan City Council area, aged 12 - 17 years, and are $3 per participant. 2021 workshops are as follows:

Food Safety Supervisor Course

Through COVID-19 we continue to offer food safety supervisor courses. Our courses include industry specific content and are designed with the needs of our students in mind. Our Food Safety Supervisor course:

  • Meets the requirements of nationally recognised training
  • Prepares food safety supervisors to supervise and oversee day to day operations and to prevent and recognise food safety hazards
  • Early years and aged care courses are specifically designed for those working with vulnerable populations

We provide opportunities for students to complete the course and all assessment in one day at face-to-face training.
