Spring 2020 Food Science Alumni Newsletter

Greetings, dear alumni!

Since our last newsletter, the Chapman Food Science program has been busy networking, researching, publishing and planning a big celebration (for all the details-read on!)  As always, if you know of any fellow alumni not receiving this newsletter, please pass it along...and encourage them to contact Robyne (Food Science Program Coordinator). We hope you'll continue to share with Robyne any job openings or internships in your company- as well as any updates you may have! In addition, we'd like to thank you for referring your colleagues, family and friends to our program-and hope you'll continue to do so.

9th Annual Networking Night

Our 9th Annual Networking Night was a terrific opportunity for our students and alumni to meet and mingle with industry folks. Nearly 90 people attended this event sponsored by the California League of Food Producers, and many enjoyed a tour of our labs in the beautiful Keck Center for Science and Engineering. Mark your calendars for our 10th Annual Networking Night on March 12, 2021!

Chapman at SCIFIC, SCiftS Suppliers Night and College Bowl

We hope you'll be at SCIFIC to cheer on our Product Development Team (you won't want to miss their cool product) and view their poster during lunch tomorrow (11:45-1:00). Results of the competition will be announced from 2.55-3:20.

Later in the day, visit us at this year's SCiftS Suppliers Night! We'll be at table OR506-come and say hi!

Our College Bowl team will be defending their Regional Championship on April 25th at Cal Poly Pomona. Hope you'll come to cheer them on!

Alumni/faculty publications- So much great research!

Congratulations to alumna Rowena Zahn (with AJ Silva) and Dr. Rosalee Hellberg for their shark cartilage research publication in the peer reviewed Food Control journal and mention in this recent Forbes article titled "The truths and myths of shark cartilage pills".

Also published in Food Control is research by alumna Priscila Liou and Dr. Hellberg on mislabeling of fish fillets; and Maggie Chung's research on the effects of  cross-contamination  and mislabeling of ground meat products. Another recent publication in a peer reviewed journal features research by Dr. Hellberg and alumni AJ Silva on PCR cloning and DNA barcoding for identification of fish species in mixed fish products in Frontiers of Ecology and Evolution.

Congratulations to alumna Yundi Liang and Dr. Lilian Were for their publication in peer-reviewed journal Food Chemistry, on cysteine's effects on chlorogenic acid greening in sunflower butter. Dr. Were also published with alumna Joele Atonfack in the Journal of the Science of Food and Agriculture on the acidulant effect on greening in sunflower butter.

Dr. Anu Prakash and alumna Dielle Fernandes published research in Radiation Physics and Chemistry explores the use of gamma radiation as an inactivation treatment for E.Coli, and alum Nasim Kheshti and Alan Cedeno's research with Dr. Prakash on the physiological response of Fuji apples to irradiation is also published in Radiation Physics and Chemistry.

Chapman Food Science's 40th Anniversary Celebration!

Can you believe it? The Chapman Food Science program is 40 years old this Fall! We'll be celebrating this incredible milestone during the Chapman Family Homecoming Weekend Oct.9th and 10th. More details coming soon on how you can be part of this milestone event!
