Dear

I have a current pet peeve; soggy straws. The shift away from plastic straws to paper ones was, of course, something the hospitality industry as a whole needed to get behind and implement. The shocking amount of plastic waste needed to be addressed, but I’m sure I’m not the only person who has noticed the downside to the paper ones.

From morning smoothies and shakes to cocktails and G'n'Ts in the evening, the new paper straws being used across bars and restaurants have one major flaw – they disintegrate in a matter of minutes. Apart from drinking quicker (maybe no bad thing), there must be someone out there who can make a sustainable alternative and banish limp straws.

Dishoom

It’s one of the capital’s favourite mini-chains, and now Dishoom is bringing its idiocyncratic Irani Bombay cafe vibes to Manchester - to a former freemason’s hall. The operators will open in the historic Manchester Hall on Bridge Street this winter, with the same dishes that have made it so popular: bacon naan rolls, black daal, biryanis, and cocktails galore.

Randall & Aubin

The founders of Randall & Aubin have bought the Manchester franchise of their popular seafood-focused restaurants out of administration. Ed Baines and Jamie Poulton have run a London site successfully for 20 years and hope to expand in the capital and go into Scotland once Manchester is back on an even footing.

Thaikhun Street Bar

The Liverpool ONE development is the location for a new street bar concept from the Thai Leisure Group. Thaikhun is already the name of its restaurant brand, but the Street Bar spin-off, which will open in October on a site next to sister restaurant Chaophraya near Chavasse Park, will have funky Thai ephemera as part of the decor and snacks, skewers and bowl food on the menu.

KRO Hospitality

"Some of Manchester’s most extravagant suites." Bold words from KRO Hospitality, which is planning to open a new hotel in the city, to add to its thriving portfolio, which includes the Velvet Hotel & Bar. Subject to approval, the luxury 45-room site on Peter Street will sit above its Asha’s restaurant, and near Albert's Schloss, and will include a club lounge for guests, and is planned to open in 2019.

Festivals round-up

Ludlow Festival runs from 7-9 September in the famously foodie town’s castle, with a great line-up which includes Romy Gill and Thomasina Miers, among many others. Meanwhile on 15 and 16 September the action is at Sefton Park, where Liverpool Food and Drink Festival has local and national heroes Gary Usher and Raymond Blanc, and much more. Over in Leeds, the International Beer Festival runs 6-9 September with brews from the US state of Maine being showcased, among a strong range of producers.

Openings round-up

The team behind El Gato Negro will open their second site - Portuguese restaurant Canto - on Cutting Room Square, Manchester on 20 September… The Ivy Collection continues its expansion with the launch of its Leeds brasserie on 25 September, in the Victoria Quarter…

Simon Rogan

It’s been a busy time for chef Simon Rogan with the opening of Aulis and Roganic in the capital, as well as his Cartmel sites, but he’s now also accepted the role of president of the Bocuse d’Or UK - taking over from Brian Turner. The global cooking competition, dubbed the ‘culinary Olympic games’, takes places every two years and in January 2019, the UK will be represented by Tom Phillips of Restaurant Story.

Michael Wignall

The celebrated chef Michael Wignall is moving to the Yorkshire Dales to take over the much loved gastropub the Angel, in Hetton. Together with his hospitality expert wife Johanna, Wignall will run the pub as it is until the end of 2018, when it will close for refurbishment. He most recently ran the kitchens at Gidleigh Park, in Devon.

Various Roles, The Clove Club Restaurant Group

The Clove Club is an award-winning restaurant in Shoreditch. Since opening in 2013, the restaurant has established itself as one of the most ambitious restaurants in London.

We have since opened our sister restaurant, Luca, and are about to open Two Lights, as our third venture. We are looking to fill a number of positions across the group as we expand with passionate, skilled, hospitality professionals.
