Behind the Vine

As I write, the 2010 harvest is finally winding down. After a wet winter, mild summer and relatively cool start to the harvest season, the grapes got exactly what they needed in early October with two extended warm spells that accelerated the ripening process. Featured Wine - 2007 Fore

Fore is a limited-edition bottling from our estate Jardine Vineyard, where we often find stray balls from a nearby golf course. Petite Sirah was one of the first varietals we planted in Paso Robles, and this wine celebrates the fact that we have been at the forefront of the local Petite Sirah movement for more than a decade. In that time, Petite Sirah has emerged as one of the appellation’s strongest performers, confirming that the varietal is perfectly suited to the region’s warm Mediterranean climate... read more »

New Release - 2009 Chardonnay

Our 2009 Chardonnay comes from nearby Monterey County, where reliable Pacific breezes orchestrate optimal growing conditions for this cool-climate varietal. The fruit was whole-cluster pressed and cold settled for 48 hours prior to fermentation in French oak barrels. The wine was then barrel aged on the lees for eight months, and the lees were stirred twice per week for the first four months for added complexity and mouthfeel... read more »

Chef Charles D. Paladin Wayne—known locally as Chef Charlie—wields more than 38 years of culinary experience. His cooking journey began in the southwest and later took him around the world. The Taste of New Wine

As we head toward the holidays, the bustle of the recent harvest is quieting down, and the new 2010 vintage wines are safely tucked away in the cellar, ready to begin the aging process. For our white wines, the aging regimen can be as short as four months in stainless steel tanks. For our limited edition red wines, it can exceed two years in French oak barrels. But at this early stage, the wines barely resemble what they will ultimately become.
