Element’s RISE breakfast was designed around healthier options with local twists. Team members keyed in on breakfast as the area where they could create the biggest brandwide impact. Granola offers chameleon-like versatility: It can be healthier or more indulgent, infused with seasonal or local flavors and ingredients, eaten as a cereal with milk, combined with fresh fruit or yogurt, or consumed plain on the go.

Formerly, the lobby lounge at the JW Marriott Chicago provided what Director of Restaurants Stacy Elefante says was “a minor breakfast setup”: coffee, pastries, and a few different breakfast sandwiches. In 2014, after three months spent developing a new concept, the lobby lounge unveiled an amped-up breakfast menu. Since the new menu rolled out in May 2014, guest feedback is positive, and lobby lounge breakfast sales are up by 27%.
