Japanese Cooking
Join us for a Japanese masterclass on our new day course, Japanese Cooking with 2012 Masterchef finalist, Andrew Kojima. On the day you will learn the basics of Japanese cooking including:
- A variety of sushi rolls
- Miso marinated cod
- Beef in soy sauce with ginger and green peppers
- Teriyaki Sauce
- Miso soup
- Japanese rice
- Green tea panna cotta with macerated strawberries

A Taste of Staffordshire & Derbyshire: 2nd May

The course will be taght by Ross Jones, a master in the field of french pastry who will teach you the basic techniques of creating:

Jeff Thomas is Seasoned's Head Chef, a classically trained master of cooking, with over 45 years experience in the industry.
Two Day Fish & Seafood:
This two day course will teach you all you need to know about fish & seafood, from fish preperation, filleting and pin boning, the secret to a perfect stock and sauce, to cooking fantastic dishes, mousses and terrines.
Modern British Cuisine:
This course will allow you to take your culinary skills to the next level and learn the techniques which make up modern British food as we know and love today.
Gastro Pub Classics:
This one day cookery course will teach you how to confidently recreate flavoursome pub classics at home.

Graduate Placement Student
Each year, Seasoned's owner Clare takes a graduate placement student under her wing to give them experience in how a small business operates, tailoring their year and their learning around their degree and interests.
Seasoned's current intern, Katie, who studies Management & Entrepreneurship at Lancaster University is returning to University in July, therefore we are looking for a passionate intern student to fill her boots.

New Recipes
Seasoned owner Clare has made it her new years resolution to try a new recipe every week to expand her culinary horizons and put into practice all of the gems of information that flow through the Seasoned kitchen every day!
So far so good - the recipes that have succeeded in the 'Ocean View' kitchen are from Ottelenhi's cook books and include:
Chickpeas and sweet potato - a lovely vegetarian main course / side dish
Beetroot & goats cheese dip
Brendan's amazing savoury danish recipe - quiet sensational
