When you’re grilling vegetables like asparagus, keep flavor additions as simple as possible so the great veggie flavors don’t compete for your attention — all you need is a little olive oil, a splash of balsamic (our featured coupons this week!) and a pinch or two of sea salt and cracked black pepper. If you’d like to add fresh herbs, try using oregano, rosemary or thyme, but sprinkle them on after you’re finished grilling.

Asparagus’s Riches

The abundance of asparagus’s spring-green spears in the produce aisles reminds us that warmer days are just around the corner. Asparagus also renews our bodies with a wealth of health-boosting nutrients. Among its health benefits:

  • Bone-building: One cup of asparagus supplies a staggering 115 percent of your daily vitamin K needs. This little-talked-about, fat-soluble vitamin plays a special role in bone health. Women, in particular, may not be getting enough of this vitamin, which makes asparagus an outstanding choice.
  • Skin and immune strength: You can fulfill one-third of your daily vitamin C needs with a one-cup serving of asparagus. Vitamin C works to strengthen the formation of collagen, a protein crucial for skin suppleness and integrity. Vitamin C also supports the immune system, which may get taxed during these late winter days as the weather changes.
  • Heart support: Folate is a B vitamin that helps clear from circulation a potentially harmful compound called homocysteine that damages artery walls. Asparagus comes to the rescue, supplying more than 60 percent of your daily folate needs in one cup. Folate (called folic acid when added to foods or supplements) is also crucial for a healthy pregnancy.

Try one of this week’s featured asparagus recipes to integrate more of this vitamin-packed veggie into your diet. Or enjoy asparagus tips raw in a salad or stir-fry, steam or microwave them on their own with other favorites such as fennel and onion, or grill them alongside fish or other meats.
