Time to Fire up the Grill!
Featured Recipe: Grilled Cumin Prawns with Avocado Salsa
Oil from Our Area
Made right here in Yolo and Placer counties, Copper Hill Olive Oil comes in several varieties, including Spanish, Italian or Greek style. We recommend using this extra virgin olive oil when you make our Grilled Cumin Prawns with Avocado Salsa (above).
Hawaiian Barbecue
Try this ribs recipe from the makers of NOH Hawaiian BBQ Sauce:
Start with 4 pounds of spareribs or baby-back ribs. Place the meat in a large pot and cover with water; boil for 30 minutes or until tender. Drain off water. Add 1 bottle of NOH Hawaiian Bar-B-Q Sauce to meat. Baste and mix well. Charbroil or oven-bake meat for 5 - 10 minutes.
Health Notes with Dr. Liz
Healthy Grilling 101
What better way to celebrate summer than to fire up the backyard grill? This summer, make your barbecuing experience the healthiest ever with these grilling basics for meats and fish.
- Clean the grill surface: Knock off charred remains with a wire brush, or bake them off at high heat before putting food on the grill.
- Use non-stick spray: Use a spritz of olive oil cooking spray; spray directly on meats and seafood to keep foods from sticking.
- Try a marinade: Marinating meats and fish 30 minutes to 4 hours improves the flavor and helps tenderize leaner meat cuts. Use low-fat, bottled marinades or make your own with vinegar or citrus juice (helps tenderize) and flavorful herbs.
- Place meat or fish directly on grill: Use medium heat for fish, because it cooks quickly. Wrap thin fish filets in foil first, and add lemon and dill for flavor. Turn fish on the grill only once, because repeat flipping causes the fish to flake apart.
- Utilize tools: For smaller pieces of seafood, cook in a grill basket or on kebabs (pre-soak wood skewers in water to avoid burning.)
- Health safety reminder: Always remember to serve cooked food on a clean platter to avoid cross contamination with raw meats.
