Cava is Spain’s answer to Champagne, and at this price, you may be ‘celebrating’ much more often!
Tasting Notes: Using the traditional Cava blend of Macabeo, Xarel-lo and Parellada grapes, this wine is made using the same process as Champagne to create delicate bubbles and rich flavours of yellow apple, citrus and dough. A mineral note adds extra elegance to the creamy texture and lively finish.
Enjoy With: Spanish seafood dishes like salty fried sardines or grilled fish, roasted poultry, Spanish ham, or creamy soft cheeses like camembert.
Style: A dry, sparkling, medium-bodied white wine.
Terroir/Region: Organic vineyards in the Alt Penedes region, just outside Barcelona, provide the grapes for Cygnus Sador Cava. Although Cava is made all over the country, this region is the heart of traditional Cava production in Spain. It was once part of the seabed of the ancient Mediterranean and concentrations of marine fossils can be found in the vineyards, adding a mineral freshness to the wines!
Producer: The team at the U Mes U winery create Cygnus Sador Organic Cava with the environment in mind. The winery was started 20 years ago and built on the foundation of low environmental impact, and is a leader of the organic and vegan movements in the region.
Availability: Cygnus Sador Organic Brut Nature Cava is available in the Vintages section of your local LCBO and for online ordering on September 19, but some stores may already have it on the shelf. Try a bottle this weekend to celebrate the ‘everyday’ every day!
