We hope you enjoyed reading this issue of Fresh to Market. Fresh to Market is a free, bi-weekly email publication of Nugget Market, Inc.

Earth Day
Featured Recipes:

Grilled Asparagus Blackbean SalsaAsparagus!

The asparagus harvest is in full swing, which inspires us to create a slew of recipes centered around one of our (and, we hope, your) favorite vegetables.

Try our Grilled Asparagus with Black Bean Salsa. In honor of Earth Day, reuse those asparagus ends after you’ve trimmed them by turning them into soup! Asparagus ends can sometimes be fibrous though, so make sure you give them a good long turn in the blender.

“Green” Risottos

Lundberg Risotto

We love the risottos from Lundberg Family Farms not only because they’re creamy and delicious, but also for the company’s “green” consciousness. The 70-year-old family business has used farming methods that care for the soil, wildlife, air and water from the beginning. Try a wide range of risotto flavors including Cheddar Broccoli, Italian Herb and Florentine — all organic and gluten-free!

Eco Tea“Green” Teas

Try these planet-friendly brews for relaxation in a cup:

Yerba Maté: Packed with antioxidants and rich in B vitamins and minerals, yerba maté is nature's original energy tonic. Choose either the box of 24 individually wrapped tea bags for maximum ease and convenience, or try loose Yerba Maté tea leaves.

Organic Darjeeling Green Tea: What could be greener than green tea? Alter Eco Green Tea is grown on the foothills of the Himalayas at 7,000 feet. At this altitude the tea leaves are small with an intense natural aroma and produce an elegant, sweet-tasting green tea.

Organic Lemon Ceylon Green Tea: Alter Eco Lemon Green Tea is a delicate blend of high-grown organic green tea and organic lemongrass. Grown at 4,000 feet and continuously exposed to the winds, these tender tea leaves develop particularly intense aromas. The tartness of lemon fused with the anti-aging benefits of green tea make this an invigorating beverage!

“Green” Housewares

Organic Towels Dishware

Paint your kitchen green for Earth Day (figuratively, at least) with these great Earth-friendly products. OK Organic Kitchen towels, dishcloths and potholders are made with organic cotton and dyes. Also try Pure Bakeware by Chantal — choose from batter bowls, square baking pans and multi-use mugs, all fired with a clear natural glaze, free from coloring agents, that reduces the environmental impact by up to 50 percent.

“Green” WasteCompost Keeper

Even the most dedicated composters know it’s not practical to run to the backyard every time an apple core or egg shell needs to be disposed of. With Norpro’s one gallon Ceramic Compost Keeper, you can now tuck spare compost bits away in this attractive counter-top container until you’re ready to take them out — and the best part is, the charcoal filter in the lid keeps the whole process odorless!

Health Notes from Dr. Liz:Dr Liz

These mighty spears protect your heart and also foster a healthy pregnancy with a natural source of the B-vitamin folate. Just a half-cup serving, about six spears cooked, contains almost half the daily value of folate, all in only 22 calories. Asparagus also supplies a hefty dose of vitamin K, a fat-soluble vitamin that researchers have determined plays a big role in bone health.

Select firm spears that don’t appear shriveled at the end from dehydration. Use the tender tips raw in salads or lightly steamed as a side dish. The thicker stems can be cooked to a tender finish in soups or casseroles.
