The asparagus harvest is in full swing, which inspires us to create a slew of recipes centered around one of our (and, we hope, your) favorite vegetables.

Try our Grilled Asparagus with Black Bean Salsa. In honor of Earth Day, reuse those asparagus ends after you’ve trimmed them by turning them into soup! Asparagus ends can sometimes be fibrous though, so make sure you give them a good long turn in the blender.

Asparagus

These mighty spears protect your heart and also foster a healthy pregnancy with a natural source of the B-vitamin folate. Just a half-cup serving, about six spears cooked, contains almost half the daily value of folate, all in only 22 calories. Asparagus also supplies a hefty dose of vitamin K, a fat-soluble vitamin that researchers have determined plays a big role in bone health.

Select firm spears that don’t appear shriveled at the end from dehydration. Use the tender tips raw in salads or lightly steamed as a side dish. The thicker stems can be cooked to a tender finish in soups or casseroles.
