Build a Better Salad

During these warm days of summer, a well-built salad can supply you with a “cool” wealth of nutrients and give you close to your daily need for veggies. The makings for a nutritious salad are simple and easily kept on hand. Use bagged greens, pre-cut veggies and pre-cooked protein choices to save time without sacrificing nutrition.

Greens: Each 2-cup serving has a mere 25 calories and comes packed with potassium, magnesium and folate (a B vitamin), which all boost heart health. Use a variety of greens: baby spinach, radicchio, arugula, baby salad greens, maché, Napa cabbage, red cabbage, endive, and red-leaf, Romaine and bib lettuces.

Veggie add-ins: Fresh sliced vegetables add a wealth of vitamins, minerals and antioxidants for only 20 calories per ½ cup. Go for color: yellow and red cherry tomatoes, peppers (all colors), radishes, snap peas, cucumbers, carrots, scallions, red onions, mushrooms, celery, zucchini squash and snap peas.

Protein possibilities: Make your salad a meal with a quality protein sources: hard boiled eggs, grilled or roasted chicken or turkey, canned tuna and salmon, canned black, garbanzo or kidney beans, cooked lean beef, and low- or non-fat cottage cheese.

Top your salad lightly with an oil-and-vinegar dressing and enjoy your cool meal!
