Double Rainbow Soup

Double Rainbow Soup!

There’s a pot of deliciously healthy soup at the end of this rainbow! This festive soup features two of our favorite colorful veggies: bulk rainbow carrots and rainbow chard. This spring-fresh soup provides a rainbow of key nutrients vital for healthy skin, immune function, circulation and vision in less than 180 calories per serving. One big bowl of soup supplies 100% of vitamin C and 20% of potassium needs. And thanks to the rainbow vegetables, this soup supplies colorful pigments such as beta-carotene, lutein and cryptoxanthin, which along with vitamin C and potassium, support heart health and ward off chronic ailments such as cancer and high blood pressure.

It’s a trap!

Trap a Tricky Leprechaun

Take a stand against leprechaun’s mischief this year! They say you can catch more flies with honey than vinegar, and we think the same goes for leprechauns. At Nugget Markets, you’ll find everything you need to make this edible and delightfully sweet leprechaun trap. We used mini pretzel sticks and peanut butter to build our trap and green goodies like gummy bears, gummy butterflies, Ferrero Rocher, Hershey’s chocolate nuggets, lucky charms and a road built from sour belts to entice the leprechaun.

Health Notes from Dr. Liz: Eating Green

Besides wearing green this St. Patrick’s Day, try eating green – both good-for-you and good-for-the-environment. Some suggestions to get you started:

  • Asparagus: These tender spears served steamed, sautéed or raw contain a wealth of anti-inflammatory compounds that studies show may help ward off cancer, diabetes and heart disease.  Asparagus also supplies over 50 percent of the daily value for folate, a B-vitamin that protects against birth defects.
  • Cabbage: Like other members of the cruciferous vegetable clan, cabbage contains a potent class of cancer fighters called indoles. A one-cup serving also has a mere 30 calories, half your daily vitamin C need and almost 100 percent of the recommended daily value for bone-building vitamin K. Make cabbage a regular on your plate in salad, stir-fry and soup.
  • Avocado: Known for their creamy taste, avocados supply vitamin E and heart-healthy monounsaturated fats. When combined with other vegetables (e.g. in a green salad), avocado aids the absorption of health-boosting nutrients like carotenes.
  • Edamame: Also known as soybean pods, the tasty beans inside pack virtually everything you need, including good-quality protein, more fiber than a bowl of bran cereal and special compounds called isoflavones that studies show may help lower your risk for osteoporosis, heart disease and some cancers.
  • Opt for organic: When strolling the produce aisle for these green foods, reach for the organic variety as a way to boost the environment’s health. Using fewer pesticides not only helps lower our exposure but also aids the planet.
