An Update from Jo Welcome to December! It's not too late to get your Pukka Tea Advent Calendar, though we are getting low now. Its been another great year at the Bethlehem Health Shop and we are so very grateful to you, our loyal customers for supporting us all year. Not too many changes to our opening hours over Christmas, though as we don't normally open on Sundays this year we will be closed on Christmas Eve and only back on the Wednesday. I will be there for a few hours on Sunday 17th December though to give you an extra shopping day. Your lifetime. The more we practice gratitude the more life flow, miracles happened and life blooms. Vegan German Gingerbread Cookies During the Christmas season these cookies should not be missed. They are baked without flour and are a healthier version of traditional gingerbread. They also make a great Christmas present or perfect for taking a plate to a party. They are gluten free, refined sugar free and oil free. PREP TIME 15 min COOK TIME 20 min ADDITIONAL TIME 1 hour Ingredients ¼ cup (50 g) chopped dates + ¼ teaspoon lemon zest ¼ cup (50 g) chopped dates + ¼ teaspoon orange zest 3 tablespoon orange juice or rum 1 cup (100 g) hazelnut flour 2 cups (200 g) almond flour 3 teaspoon gingerbread spice (see below) ¼ teaspoon baking powder 6 tablespoon Aquafaba * 150 g dark chocolate Gingerbread Spice (with some left over for another day) 4.5 tablespoon (35 g) cinnamon powder 4 teaspoon (9 g) clove powder 1 teaspoon (2 g) allspice powder ½ teaspoon (1 g) nutmeg powder ½ teaspoon (2 g) of coriander powder 1 teaspoon (2 g) of cardamom powder 1 teaspoon (2 g) ginger powder ⅔ teaspoon (1 g) mace powder (if available) Instructions Grind hazelnuts and almonds in a food processor or blender if you use whole nuts. Add dates with orange and lemon zest with orange juice or rum and blend. Now add gingerbread spice and baking powder and mix again. Beat the Aquafaba, then fold in the nut mass. Put baking paper onto a baking tray and spoon dollops of dough on tray and flatten to form cookie shapes. The dough should be about 0.6inch (1.5 cm) high. Smooth the top of the gingerbread, preferably dip your fingers in some water and smooth. Let rest for 1 hour. Preheat the oven to 140 °C and bake for 15-20 minutes until you get a light color. Allow cooling and melt the chocolate in a water bath. Now coat the gingerbread. Decorate the gingerbread with almonds. * Aquafaba is the drained water from canned chickpeas. If you don't have aquafaba and you don't want to open a can of chickpeas, you can also use flaxseed by mixing 2 tablespoons of ground flaxseed with about 80 ml of water. |
