Egg prices are cracking records, and it's no surprise—it's tough out there. The USDA reports egg prices shot up 13.8% in January alone and could rise another 40% this year due to ongoing supply chain issues and bird flu outbreaks. 

For many of our neighbors, the rising cost of staples like eggs makes stretching their grocery budget even harder. At Lift UP, we feel the impact too—supply chain disruptions and rising costs have made it increasingly difficult for us to keep eggs stocked at Preston's Pantry, Delivered Groceries, and Onsite Pantries in affordable housing communities. While we work hard to provide this essential item, we also recognize the importance of finding creative solutions when availability changes. That's why we're sharing egg substitutes and other budget-friendly food tips to help our community continue enjoying nutritious meals, no matter the challenges.

 Top Egg Substitutes for Baking: 

  • Flaxseed Meal – 1 tbsp mixed with 2½ tbsp water = 1 egg 

  • Aquafaba – The liquid from canned chickpeas makes perfect muffins & meringues! 

  • Commercial Replacers – Try Bob's Red Mill for baking or Egg Beaters for scrambling.
