Dear friend, As the summer sun graces our days with warmth, turning on the stove can sometimes feel like adding a log to the fire. Our Supper Club has been busy exploring ways to keep kitchens cool while still enjoying vibrant, nutritious meals. More than just a cooking class, Supper Club is a culinary haven where stronger community ties are forged with residents, and delicious memories are made. In her quest for summer-friendly fare, this week Supper Club Coordinator Natasha Butcher-Cook guided Medallion Apartment residents in the craft of making fresh, nutritious spring rolls. This culinary adventure led them through an array of crunchy vegetables, aromatic herbs, and protein-packed tofu. The best part? Residents created this rainbow of flavors without switching on a stove or oven, highlighting that delicious and healthful food doesn't always require complicated cooking techniques. Laughter was shared as residents maneuvered delicate rice paper and took pride in successfully rolling a spring roll, highlighting that Supper Club's main ingredient is the residents. Exposure to new foods and cooking methods is a primary goal of Supper Club. “This class was a game-changer for me,” Kim said. Navigating health challenges, Kim adheres to a strict gluten- and dairy-free diet, often relegating to salads as her staple meal. Before participating in the class, preparing spring rolls seemed daunting. Now she proudly considers herself a spring roll virtuoso, ready to utilize her newly acquired wrapping skills to diversify the meals she prepares for herself and her mother.
