Australian Food Safety Week 2023

The theme for this year’s Australian Food Safety Week, to be held from 11 to the 18 November 2023, will be Food safety – dollars and sense. The 2023 campaign will focus on adapting to the increasing cost of living by making savings through reducing food waste and growing your own food while ensuring the food you and your family eat remains safe. Visit the Food Safety Information website for more information and to get involved.

Let's talk about food safety

Firstly, what is it?

Food safety is the handling, preparing and storing of food to reduce the risk of becoming sick from foodborne illnesses. Unfortunately, 1 in 5 people will get a foodborne illness each year, with bacteria being the leading cause in most cases and usually arising from improper handling, storage or food preparation.

Any person handling food, whether part of your job or cooking at home, should follow good food safety practices to prevent food from becoming contaminated and causing food poisoning. This includes food-related practices such as food handling, preparing, storage, heating and serving, food gardens, food experiences and cleaning food areas and equipment.

The importance of food safety practices

Food must be stored correctly to protect it from contamination and at the right temperature to ensure it is safe to eat.  The recommended temperature to store potentially hazardous food is either 5°C or colder or 60°C or hotter when received, displayed, transported, or stored.

To keep food safe:

  • Keep storage areas clean, dry and free of pests
  • Use food-safe containers to protect food
  • Store food and containers off the ground and away from chemicals such as cleaning products
  • Store potentially hazardous food below 5°C or above 60°C
  • Store raw food such as meat and seafood covered and separate or below ready to eat food to avoid cross contamination
  • Defrost food in the fridge
  • Check food packaging is undamaged

Personal hygiene:

  • Make sure clothes, equipment and kitchen surfaces are clean
  • Tie long hair back
  • Remove rings and watches during food preparation
  • Always wash hands before handling food, between raw and cooked foods, after using the bathroom, coughing or sneezing and after handling waste

There are critical points during the purchase, storage, preparation and serving of foods, where food may become contaminated or exposed to conditions which promote unsafe bacterial growth. For more information, click on the button below to download a fact sheet on food storage and preparation.

Food safety checklist

Do you conduct internal audits on food safety procedures at your service? There are a range of critical activities that need to be completed when it comes to food safety, such as during food purchasing, storage and preparation, as well as cleaning, equipment maintenance and pest control, to name a few.

Helping children learn about food safety

Check out the following tips on how to teach children food safety when helping in the kitchen:

  • Wash hands with warm water and soap. Rub hands together for 15 - 20 seconds, then rinse making sure all soap is gone. Pat dry with a paper towel
  • Try singing the Happy Birthday song as a guide for how long it should take to wash and dry hands
  • Wash hands before preparing food, after using the bathroom, sneezing or blowing their nose, and after touching pets
  • Wash fruit and vegetables before using
  • Keep high risk foods in the fridge until needed, such as meat, seafood, dairy and cooked rice
  • Use different chopping boards and utensils for cooked foods and raw foods
  • Keep stored food covered and label with the date the item was opened as well as the use by date, if applicable
