General Manager Message

Hello everyone and Welcome to 2022

For those of you that I haven’t met or spoken to already, my name is Huda Ammar and recently I was appointed as the Acting General Manager for Everglow Community Care, I am very pleased to be offered this position and hoping to serve you well and make this transition as seamless as possible. I am looking forward to this amazing opportunity of serving as the general manager to such wonderful organization.

I have been with Everglow for just under 10 years, in 2012 I started as a project officer then my role progressed to a case manager/occupational therapist and in 2016 I was offered the regional services manager role.

The past years have been of significant growth, challenging work, and dedication from all involved. Everglow is committed to delivering effective and seamless services to enable our clients lives longer and safer in their home as well as providing quality of life.

In the coming months Everglow will be holding information sessions in Townsville, Ingham, and Ayr, during these information sessions we provide important information and updates in the aged care sector.

As you are aware COVID-19 has now entered Queensland. Whilst I understand that it may be a concerning time for you, I wish to advise you that Everglow will continue to ensure that you receive your services safely and uninterrupted. Everglow has put in place measures to ensure the safety of both our clients and employees.

Mushroom and Thyme Campanelle

Ingredients 

• 12 oz. campanelle or other short pasta

• 4 tbsp. olive oil divided

• 1 lb. cremini mushrooms, trimmed and quartered

• 1 large shallot, finely chopped

• 2 tbsp. fresh thyme leaves

• Kosher salt and pepper

• 1/2 c. dry white whine

• 2/3 c. crème fraiche

 Instructions

1. Cook pasta per package directions. Reserve 1/4 cup cooking water, then drain pasta
2. Heat 2 tablespoons oil in large skillet on medium heat. in 2 batches, cook mushrooms tossing occasionally, until golden brown and tender, 5 -7 minutes then transfer to a plate. (Keep an eye on second batch as it will cook more quickly.)
3. Reduce heat to medium add shallot, thyme, and 1/2 teaspoon each salt and pepper and cook, stirring occasionally until tender, 2 - 3 minutes.
4. Add wine and shimmer until nearly evaporated, about 2 minutes. Stir in crème fraiche, then mushrooms  Toss with pasta, adding reserved pasta cooking water, 2 tablespoons at a time, if pasta seems dry
