This is perhaps best shown by the UN General Assembly's recognition of the right in 2022 and well as the Inter-American Court of Human Rights recognising the right just last year.

The Journal of Human Rights and the Environment (JHRE) is an interdisciplinary annual law and theory journal covering the links and tensions between human rights and environmental issues as well as human and more-than-human relations.
