- Wash fruit and
vegetables before using
- Keep high risk foods in the fridge until needed, such as meat, seafood, dairy and cooked rice

Food Safety Supervisor and Food Safety Program Information
Element 2.1.2 Health practices and procedures
Effective illness and injury management and hygiene practices are promoted and implemented.
What is a Food Safety Supervisor? A food safety supervisor is a person who has the knowledge, skills and ability to oversee the food safety operations of a food business on a day-to-day basis. This involves: - How to recognise, prevent and alleviate food safety hazards in the food business

- Has the authority to supervise and
give direction/instruction about matters relating to food safety to all persons who handle food in the food business
- Ensure food hygiene and safety standards are met and maintained
- Involved in the day-to-day operations of the food business
What is a Food Safety Program? A food safety program outlines how a business identifies and controls food safety hazards relating to food handling such as preparing, storing and handling food. A food safety program should: - Identify all potential food safety hazards that may occur in the food service
- Identify solutions for controlling these hazards
- Include daily records to measure and observe each of the controls
- Provide procedures for corrective action when a hazard is found to not be under control
- Provide regular reviews of the program by the food business to ensure its adequacy
- Include a documented plan that outlines basic food safety
procedures should the food safety supervisor become absent

Food Safety Policy for Education and Care Services
Element 2.1.2 Health practices and procedures
Effective illness and injury management and hygiene practices are promoted and implemented.
A food safety policy outlines how an education and care setting will provide food to children. This includes responsibility for meeting the children’s nutritional requirements within the National Quality Framework (NQF) guidelines and how the service provider would accomplish this. Under the National Quality Standard (NQS) and the National Regulations, all services (whether or not they provide food and beverages) are required to: - Actively promote healthy eating
- Have in place policies and procedures concerning nutrition, food and beverages,
and dietary requirements and ensure policies and procedures are followed
- Make sure children always have access to safe drinking water
- Ensure children are offered food and beverages appropriate to the needs of each child regularly throughout the day
- Ensure all staff know and follow the policy
For a copy of the Nutrition, Food and Beverages, Dietary Requirements Policy Guidelines developed by the Queensland Government in partnership with the Australian Children’s Education and Care Quality Authority (ACECQA), click on the button below. These guidelines have been designed to help you develop policies and procedures that address
the unique context, user group and operating model of your individual service.
