In 2019 the Eat-Lancet report was published in The Lancet. It is an international collaboration looking at dietary patterns and how they influence planetary health. This analysis is critically important, because without a healthy planet we cannot have healthy people. The authors concluded that, "Transformation to healthy diets by 2050 will require substantial dietary shifts. Global consumption of fruits, vegetables, nuts and legumes will have to double, and consumption of foods such as red meat and sugar will have to be reduced by more than 50%. A diet rich in plant-based foods with fewer animal source foods confers both improved health and environmental benefits." Try this vegan double berry ice cream from Subh Agarwal, MD. There's no added sugar! Try one of the U.N.'s recommendations above! Could you reduce the packaging in the foods you purchase? Try a new legume? Plan a vegetable garden for next summer?
