The Importance of Food Safety Practices
Element 2.1.2 Health practices and procedures
Effective illness and injury management and hygiene practices are promoted and implemented.
Food must be stored correctly to protect it from contamination and at the right temperature to ensure it is safe to eat. The recommended temperature to store potentially hazardous food is either 5°C or colder or 60°C or hotter when received, displayed, transported, or stored. To keep food safe: - Keep storage areas clean, dry and free of pests
- Use food-safe containers to protect food
- Store food and containers
off the ground and away from chemicals such as cleaning products
- Store potentially hazardous food below 5°C or above 60°C
- Store raw food such as meat and seafood covered and separate or below ready to eat food to avoid cross contamination
- Defrost food in the fridge
- Check food packaging is undamaged
Personal hygiene: - Make sure
clothes, equipment and kitchen surfaces are clean
- Tie long hair back
- Remove rings and watches during food preparation
- Always wash hands before handling food, between raw and cooked foods, after using the bathroom, coughing or sneezing and after handling waste
Teaching Children About Food Safety
Element 2.1.2 Health practices and procedures
Effective illness and injury management and hygiene practices are promoted and implemented.
By getting children involved in cooking experiences, they not only learn about food safety and food hygiene practices, but also have the opportunity to: - Increase their confidence
- Promote health by talking about healthy choices and where food comes from
- Improve skills in maths (e.g. measuring ingredients)
- Improve reading skills (e.g. learning new words when reading recipes)
- Encourage
problem-solving
- Foster creativity
Consider using appropriate skills for different age groups - click on the button below to find out more.
Food Safety for Lunchboxes
Element 2.1.2 Health practices and procedures
Effective illness and injury management and hygiene practices are promoted and implemented.
Packing a lunch box safely is important to keep the food fresh and enjoyable, and also safe to eat. As bacteria that cause food poisoning grow in the temperature danger zone (between 5°C and 60°C) it is essential to keep high-risk food cool and securely packed. Top tips for food safety with lunchboxes: - Use an insulated lunchbox if possible
- Always include an ice brick
- A frozen/cold drink is a great
idea, but once it is consumed, it will no longer keep food cold
- Ensure food is cold before packing; use frozen bread or make it the night before and freeze
- Keep your lunchbox refrigerated until just before you leave home
- If there is no refrigeration available, keep out of the sun
- Once home, throw out any perishable food not eaten
- Clean lunch box, containers and drink bottle in warm soapy water after each use
