Theme 4 - Managing Food Allergies and Intolerances
The fourth and final theme for the subscription year is Managing Food Allergies and Intolerances. This very important topic encompasses a range of Quality Areas within the National Quality Standard and will be explored in depth by the Nutrition in OSHC team over three months, from January to March 2022. Allergy Best Practice Guidelines
Element 2.2.1 - Supervision
At all times, reasonable precautions and adequate supervision ensure children are protected from harm and hazard Assessors may observe: Nominated supervisors, educators, co-ordinators and family day care educator assistants implementing risk minimisation plans for children enrolled at the service who have a specific health care need, allergy or relevant medical condition
In October 2021, the National Allergy Strategy released the Best practice guidelines for anaphylaxis prevention and management in schools and children's education and care (CEC) services (including outside school hours care). The Guidelines have been developed through extensive consultation with key stakeholder organisations to provide consistent, evidence-based, best
practice guidance for staff in schools, CEC services and parents. To help schools and CEC services to meet the recommendations of the Guidelines, several supporting resources have been created. The supporting resources consider site specific issues relating to anaphylaxis prevention and management and put into place appropriate strategies to allow children at risk of anaphylaxis to safely participate fully in school and CEC service activities.
Food Allergies vs Food Intolerances

A food allergy is an immune system response to certain proteins in food. It is caused when the body mistakes an ingredient in food as harmful and creates a defence system (antibodies) to fight it. An allergic reaction occurs when the antibodies are battling an 'invading' food protein. The reaction can range from mild to severe. Symptoms of a food allergy can develop and disappear over time, and a food that triggered only mild symptoms on one occasion may cause more severe symptoms at another
time.
Common food allergens- Eggs
- Cow's milk (dairy)
- Peanuts and tree nuts
- Sesame
- Soy
- Wheat
- Fish and other seafood
Anaphylaxis Anaphylaxis is a severe and potentially life threatening allergic reaction that requires immediate attention.
Signs and symptoms for food allergens- Skin rashes, hives or welts on skin
- Vomiting
- Swelling around the face/mouth/eyes
- Stomach pains
- Respiratory difficulty - wheezing, shortness of breath
Signs of anaphylaxis - Difficult/noisy breathing
- Swelling of tongue
- Swelling/tightness in the throat
- Difficulty talking and/or hoarse voice
- Wheezing or persistent cough
- Persistent dizziness or collapse
- Pale and floppy (in young children)
A food intolerance is a digestive system response to certain chemicals, compounds and irritants found in a range of foods, rather than an immune system response. It occurs when a person’s digestive system is unable to properly digest, or break down, the food. A food intolerance is generally less severe or life threatening than a food allergy.
Common food intolerances- Lactose - found in dairy
- Amines - natural occurring chemicals found in certain foods
- Salicylates - a compound found in certain fruits, vegetables, herbs and spices
- Irritants - can trigger gut irritation in some individuals (e.g. curry, caffeine)
- Food additives - e.g. food colouring, flavour enhancers,
preservatives
- Food poisoning
Signs and symptoms for food intolerances- Nausea
- Stomach pain
- Gas, cramping and bloating
- Vomiting
- Heartburn
- Diarrhea
- Headaches
- Irritability or
nervousness
Healthy Lunchbox Week 2022
Healthy Lunchbox Week is almost here! Held at the start of Term 1 each year, Healthy Lunchbox Week is a Nutrition Australia initiative that helps families access credible lunchbox nutrition information and recipes, setting them up for the year ahead. This year's campaign will run from the 6th - 12th February. Around one third of children’s daily food intake comes from the lunchbox so it’s important we make it count. Use this time to build your bank of lunchbox inspiration and know-how with Nutrition Australia’s healthy lunchbox
information and recipes. Nutrition Australia have teamed up with other health-focused organisations to share our collective lunchbox resources, making the Healthy Lunchbox Week website a hub for all the latest lunchbox info and will remain your source of inspiration throughout the year. If you are needing to cater for dairy allergies and intolerances, here are some dairy free recipe ideas. Dairy free meals and baking have never been easier, with so many plant based alternatives on the market. When replacing dairy products (e.g. milk, yoghurt or cheese) with a dairy free alternative, make sure the ingredient is fortified with 100mg of calcium per 100g or 100mL to support strong growing bones and teeth. Please feel free to share these recipes with families.

Queensland Healthy Kids Menu
Healthy Kids Menu is an innovative healthy eating initiative from Health and Wellbeing Queensland (HWQld) designed to improve the availability and promotion of healthier food and drink on kid's menus at cafes, restaurants, hotels, and clubs. The initiative outlines a set of nutritional guidelines to help venues make healthy food and drink options more readily available to children. Has it been a while since you or your staff completed a Food Safety Supervisor Course? We are now offering Food Safety Supervisor recertification training! Our recertification course is a condensed refresher course (3 hours) and is for those staff who already hold the Food Safety Supervisor qualification (for the vulnerable populations units of competency) and who are wanting to update their skills and knowledge. Upon successful completion of the training, students will receive a Statement of Attainment with the units of competency HLTFSE001, HLTFSE005, HLTFSE007.
