Healthy Lunchbox Week 2021

This year, Healthy Lunchbox Week will be on from 7th - 13th February!

Healthy Lunchbox Week is a Nutrition Australia initiative that aims to inspire parents and carers across Australia to create healthy lunchboxes their children will enjoy.​

Did you know children consume around 30% of their daily food intake at school? Most of this comes from the contents of their lunchbox. What children eat during their day at school plays a crucial role in their learning and development.

Healthy Lunchbox Week helps families prepare healthy lunchboxes by:

  • Inspiring healthy lunchbox ideas and recipes
  • Ensuring a healthy lunchbox balance across core food groups
  • Awareness of lunchbox food hygiene and safety

As part of Healthy Lunchbox Week, Nutrition Australia has joined forces with Life Education for Australia’s Healthiest Lunchbox competition. For more information and to enter the competition, click here.

How to cut summer fruit

A recent article by ABC Everyday discusses some tips and tricks for cutting and dicing the delicious summer fruit that is in abundance at the moment. Food writer Alice Zaslavsky shares her handy hacks for nectarines, peaches, cherries, mango, pineapple and watermelon.

Recipe Idea

Filo Sausage Rolls

As a tasty take on the classic sausage roll, these filo sausage rolls can be adapted to suit you - include lean mince, grated vegetables, herbs and flavours of your choice.

Ingredients
1 carrot, grated
1 zucchini, grated
1 onion, grated
250g beef, pork or veal mince
¼ cup fresh parsley, finely chopped
2 garlic cloves, crushed
1 teaspoon ground paprika
¼ cup breadcrumbs
Freshly cracked pepper, to season
12 sheets fresh filo pastry
Extra virgin olive oil or spray
2 teaspoons poppy seeds

Method
1. Preheat oven to 200°C and line two large baking trays with baking paper.
2. Squeeze out as much liquid as possible from the grated carrot, zucchini and onion.
3. In a mixing bowl, combine the carrot, zucchini, onion, mince, fresh parsley, garlic, ground paprika, breadcrumbs and pepper. Mix well to combine. Divide the mixture into 6 portions.
4. On a clean work surface, place down one sheet of fresh filo pastry. Lightly brush or spray with extra virgin olive oil. Add another sheet of pastry and lightly brush or spray again with extra virgin olive oil. Fold this in half from left to right.
5. Place 1 portion of the mixture at the end of the pastry sheet closest to you and roll the pastry firmly to enclose the filling. Repeat with the remaining mixture and pastry to make 6 rolls.
6. Cut each roll into 2 – 3 pieces and place seam side down on a lined baking tray.
7. Lightly brush or spray each roll with extra virgin olive oil and sprinkle with poppy seeds.
8. Bake in the oven for approx. 20 minutes or until golden brown.

Serves 6

The Boost your Healthy digital hub has been developed by Health and Wellbeing Queensland to provide support, inspiration and ideas to help Queenslanders stay healthy and active during COVID-19.

It features content from a wide range of Health and Wellbeing Queensland Alliance Partners who have played a valuable role in supporting the creation of the site. It also offers a platform for people to showcase how they are staying healthy through #BoostCampQld, and the Big Boost will feature a series of challenges to motivate and encourage people to stay healthy at this difficult time.

Food Safety Supervisor Course

Through COVID-19 we continue to offer food safety supervisor courses. Our courses include industry specific content and are designed with the needs of our students in mind. Our Food Safety Supervisor course:

  • Meets the requirements of nationally recognised training
  • Prepares food safety supervisors to supervise and oversee day to day operations and to prevent and recognise food safety hazards
  • Early years and aged care courses are specifically designed for those working with vulnerable populations

We provide opportunities for students to complete the course and all assessment in one day at face-to-face training.
